Pour la garniture, l\u2019artisan reste fid\u00e8le \u00e0 un choix simple et efficace : des pommes Golden, s\u00e9lectionn\u00e9es pour leur douceur et leur tenue \u00e0 la cuisson.<\/p>\n<p>Autre particularit\u00e9 : la quantit\u00e9. Pour une tarte destin\u00e9e \u00e0 quatre personnes, Youssef utilise cinq pommes enti\u00e8res, afin d\u2019obtenir une garniture abondante et fondante. Les lamelles sont ensuite napp\u00e9es d\u2019un voile de beurre et saupoudr\u00e9es de sucre cassonade avant de passer au four, pour un r\u00e9sultat d\u00e9licatement caram\u00e9lis\u00e9.<\/p>\n<p>Fid\u00e8le \u00e0 son humilit\u00e9, le boulanger insiste sur la simplicit\u00e9 de sa recette : \u00ab Il n\u2019y a rien de sophistiqu\u00e9, seulement de bons produits.
