Aux commandes de <a href=\"https:\/\/www.instagram.com\/aubergedugres?utm_source=ig_web_button_share_sheet&amp;igsh=ZDNlZDc0MzIxNw==\" target=\"_blank\" rel=\"nofollow noopener\">L\u2019Auberge du Gr\u00e8s<\/a>, trois associ\u00e9s\u00a0: Mathilde Choremi, Caroline Baillaud et Guilhem Baillaud, rejoints en cuisine par le chef Valentin Trottoux.<\/p>\n<p>Ensemble, ils ont investi un ancien b\u00e2timent dont ils ont pr\u00e9serv\u00e9 les murs, tout en repensant enti\u00e8rement les volumes. Huit mois de travaux ont permis de transformer les lieux en un espace chaleureux o\u00f9 les clients se sentent \u00ab\u00a0comme \u00e0 la maison\u00a0\u00bb.<\/p>\n<p>Au c\u0153ur du projet, Guilhem Baillaud peut s\u2019appuyer sur un parcours remarquable. Form\u00e9 \u00e0 l\u2019\u00e9cole h\u00f4teli\u00e8re de Toulouse, pass\u00e9 chez Franck Putelat, Meilleur ouvrier de France et Bocuse d\u2019argent, il s\u2019est ensuite perfectionn\u00e9 en Suisse aupr\u00e8s du chef Bernard Coloma avant de s\u2019installer en\u00a02012 \u00e0 <a href=\"https:\/\/www.laprovence.com\/bouches-du-rhone\/saint-remy-de-provence-13100\" target=\"_blank\" rel=\"nofollow noopener\">Saint-R\u00e9my-de-Provence<\/a>.<\/p>\n<p>Chef du <a href=\"https:\/\/www.laprovence.com\/article\/edition-arles\/4595846\/guilhem-baillaud-un-chef-avec-la-cuisine-dans-la-peau.html\" target=\"_blank\" rel=\"nofollow noopener\">Caf\u00e9 de la place<\/a>, puis chef \u00e0 domicile pendant plusieurs ann\u00e9es, le cuisinier a \u00e9galement \u00e9t\u00e9 candidat au Bocuse d\u2019or France, une exp\u00e9rience qui marque sa vision exigeante du m\u00e9tier.<\/p>\n<p>Une broche tournante \u00e0 la vue des convives<\/p>\n<p>Ici, une salle est d\u00e9di\u00e9e aux grandes tabl\u00e9es, une autre s\u2019organise autour du feu, avec un imposant grill et une broche t&#8230;<\/p>\n<p><script async src=\"\/\/www.instagram.com\/embed.js\"><\/script><\/p>\n","protected":false},"excerpt":{"rendered":"\u00c0 Saint-\u00c9tienne-du-Gr\u00e8s, un nouveau restaurant vient d\u2019ouvrir ses portes et bouscule en douceur les habitudes du village.
