La haute gastronomie n\u2019\u00e9chappe pas \u00e0 cette r\u00e8gle, m\u00eame si les difficult\u00e9s s\u2019y vivent de mani\u00e8re plus feutr\u00e9e, derri\u00e8re le paravent de prix pas vraiment accessibles au commun des mortels.<\/p>\n<p>Une note sal\u00e9e n\u2019est pourtant pas toujours gage de marges confortables. Un gastro peut faire valser les prix, il danse aussi avec les co\u00fbts. \u00c9quipe tr\u00e8s importante par rapport au nombre de couverts, produits de qualit\u00e9 voire d\u2019exception qui font gonfler les factures d\u2019approvisionnement, frange r\u00e9duite de client\u00e8le\u00a0: la haute gastronomie s\u2019av\u00e8re, c\u2019est un peu contre-intuitif, un artisanat pointu et fragile.<\/p>\n<p>De longue date, nombre de chef (fe) s ont r\u00e9pondu \u00e0 l\u2019\u00e9quation en accolant \u00e0 leur vaisseau amiral une table plus simple et aux additions moins impressionnantes. Les \u00e9quipes de <a href=\"https:\/\/www.laprovence.com\/article\/region\/3218956393147914\/a-marseille-l-odyssee-mediterraneenne-de-gerald-passedat\" target=\"_blank\" rel=\"noopener\">G\u00e9rald Passedat<\/a>, le chef marseillais aux trois macarons Michelin pour son <a href=\"https:\/\/www.passedat.fr\/fr\/le-petit-nice\/restaurant-3-etoiles-marseille-bord-de-mer\" target=\"_blank\" rel=\"noopener\">Petit Nice<\/a>, op\u00e8rent ainsi le <a href=\"https:\/\/www.laprovence.com\/article\/region\/2149706010682515\/marseille-le-bar-1917-versant-bistronomique-et-bien-leche-du-restaurant-etoile-du-petit-nice\" target=\"_blank\" rel=\"noopener\">Bar 1917<\/a>, brasserie \u00e0 la proposition moins soutenue et aux prix plus abordables.
