Dans ce pain rond imbib\u00e9 d\u2019huile d\u2019olive peuvent se trouver uniquement du thon avec des tomates, des radis, de la c\u00e9bette, des f\u00e9vettes, du poivron vert, de l\u2019\u0153uf dur, des olives locales, une feuille de basilic et des anchois. Mais surtout pas de la mayonnaise, de la salade ou encore du poulet, des alternatives qui ont tendance \u00e0 donner des haut-le-c\u0153ur aux Ni\u00e7ois.<\/p>\n<p class=\"fig-paragraph\">Le pan-bagnat souhaite \u00eatre reconnu comme une \u00absp\u00e9cialit\u00e9 traditionnelle garantie\u00bb (STG), un label europ\u00e9en qui existe depuis 1992 et qui fait partie\u00a0<a href=\"http:\/\/www.lefigaro.fr\/actualite-france\/qualite-ou-origine-d-une-viande-bien-etre-animal-ces-labels-qui-se-multiplient-au-risque-de-creer-la-confusion-20240522\" data-fig-type=\"Article\" data-gtm-custom-categorie=\"navigation\" data-gtm-custom-action=\"crossclick\" data-gtm-custom-label=\"Contextuel\" data-gtm-event=\"customEventSPE\" data-fig-domain=\"LEFIGARO\" target=\"_blank\" rel=\"noopener\">des cinq signes gages de qualit\u00e9<\/a>. 66 produits b\u00e9n\u00e9ficient du label STG en Europe, comme la mozzarella ou le jambon serrano, mais seulement trois en France, \u00e0 savoir\u00a0<a href=\"https:\/\/www.lefigaro.fr\/flash-actu\/2013\/05\/07\/97001-20130507FILWWW00586-moules-de-bouchot-reconnues-par-l-ue.php\" data-fig-type=\"NewsFlash\" data-gtm-custom-categorie=\"navigation\" data-gtm-custom-action=\"crossclick\" data-gtm-custom-label=\"Contextuel\" data-gtm-event=\"customEventSPE\" data-fig-domain=\"LEFIGARO\" target=\"_blank\" rel=\"noopener\">les moules de Bouchot<\/a>\u00a0depuis 2013, le\u00a0<a href=\"http:\/\/www.lefigaro.fr\/voyages\/montagne\/berthoud-tartiflettes-croutes-petit-precis-des-plats-a-gouter-a-la-montagne-pour-les-fondus-de-fromage-20211202\" data-fig-type=\"Article\" data-gtm-custom-categorie=\"navigation\" data-gtm-custom-action=\"crossclick\" data-gtm-custom-label=\"Contextuel\" data-gtm-event=\"customEventSPE\" data-fig-domain=\"LEFIGARO\" target=\"_blank\" rel=\"noopener\">Berthoud savoyard<\/a>\u00a0depuis 2020 et le b\u0153uf traditionnel de race normande depuis l\u2019an dernier.<\/p>\n<p>Sp\u00e9cialit\u00e9 ancienne et populaire<\/p>\n<p class=\"fig-paragraph\">\u00abLa sp\u00e9cialit\u00e9 traditionnelle garantie correspond \u00e0 un produit dont les qualit\u00e9s sp\u00e9cifiques sont li\u00e9es \u00e0 une composition, des m\u00e9thodes de fabrication ou de transformation fond\u00e9es sur une tradition, mais pas son origine g\u00e9ographique\u00bb, pr\u00e9cise l\u2019institut national de l\u2019origine et de la qualit\u00e9. \u00abLa STG est fond\u00e9e sur un savoir-faire ancien, typique et local, mais peut \u00eatre r\u00e9alis\u00e9e en dehors de sa r\u00e9gion d\u2019origine.\u00bb<\/p>\n<p class=\"fig-paragraph\">Le pan-bagnat ni\u00e7ois, vendu un peu partout dans la ville et, souvent, \u00e0 bas co\u00fbt comme les autres sp\u00e9cialit\u00e9s populaires (pissaladi\u00e8re, socca), esp\u00e8re ainsi \u00eatre la troisi\u00e8me sp\u00e9cialit\u00e9 fran\u00e7aise reconnue, m\u00eame si la d\u00e9marche va prendre plusieurs ann\u00e9es sans garantie de l\u2019obtention du fameux label.<\/p>\n<p class=\"fig-paragraph\">\u00abNotre pan-bagnat n\u2019est pas qu\u2019un simple sandwich, c\u2019est un embl\u00e8me de notre identit\u00e9 ni\u00e7oise, de notre patrimoine culinaire et de notre art de vivre\u00bb, a d\u00e9fendu le maire de Nice,\u00a0<a href=\"http:\/\/www.lefigaro.fr\/nice\/municipales-2026-a-un-an-des-elections-christian-estrosi-deja-en-mode-campagne-a-nice-20250328\" data-fig-type=\"NewsFlash\" data-gtm-custom-categorie=\"navigation\" data-gtm-custom-action=\"crossclick\" data-gtm-custom-label=\"Contextuel\" data-gtm-event=\"customEventSPE\" data-fig-domain=\"LEFIGARO\" target=\"_blank\" rel=\"noopener\">Christian Estrosi<\/a>, qui a fait cette annonce lors du lancement de la f\u00eate locale des Mai.
