Mais saviez-vous que certains se sont aussi lanc\u00e9s dans la fabrication d\u2019un laitage aux origines vikings\u00a0? C\u2019est une sp\u00e9cialit\u00e9 islandaise, au blanc per\u00e7ant et \u00e0 la texture dense, 0\u00a0% de mati\u00e8re grasse mais tr\u00e8s riche en prot\u00e9ines. Le skyr a conquis, en quelques ann\u00e9es, la France enti\u00e8re.<\/p>\n<p>Si les industriels proposent leur skyr dans les rayons de plus en plus larges des grandes surfaces (les ventes ont augment\u00e9 de 34\u00a0% entre avril\u00a02025 et mars\u00a02026 selon l\u2019institut Circana), certains Altilig\u00e9riens s\u2019y mettent aussi.<\/p>\n<p>\u00ab\u00a0On doit commencer \u00e0 produire le skyr d\u00e8s le matin\u00a0\u00bb<\/p>\n<p>C\u2019est le cas de la laiterie G\u00e9rentes. Depuis fin avril, ses dirigeants, Pierre et Didier G\u00e9rentes, ont lanc\u00e9 leur skyr made in Haute-Loire. \u00ab\u00a0C\u2019\u00e9tait pour coller \u00e0 la demande de la client\u00e8le, avoue Didier G\u00e9rentes.
