Among the newest is Florette. \u201cThe way I discovered Toronto as a teenager was through its restaurants,\u201d says founder Jerry Zhang, who left a career at Warner Music to open his own venue. \u201cThat\u2019s how I fell in love with the city. I wanted to open something that was part of what makes Toronto\u2019s food scene special.\u201d<\/p>\n<p><img loading=\"lazy\" data-recalc-dims=\"1\" decoding=\"async\" height=\"730\" width=\"611\" data-id=\"47769\" src=\"https:\/\/www.europesays.com\/germany\/wp-content\/uploads\/2026\/06\/denizens-florette-207.jpg\" alt=\"Red-framed storefront of Florette restaurant in Toronto with large windows showing interior dining space and staff\" class=\"wp-image-47769\"  \/><\/p>\n<p><img loading=\"lazy\" data-recalc-dims=\"1\" decoding=\"async\" height=\"730\" width=\"487\" data-id=\"47768\" src=\"https:\/\/www.europesays.com\/germany\/wp-content\/uploads\/2026\/06\/denizens-florette-301.jpg\" alt=\"Hand pouring white wine into glass on restaurant table with chicken croquettes and elegant table setting\" class=\"wp-image-47768\"  \/><\/p>\n<p class=\"has-inverted-color has-text-color has-link-color wp-block-paragraph wp-elements-8cd8d93421a8789098fb5cb2e68f0bfa\">Toronto studio Denizens of Design saw to the interiors, which include a luminous ceiling printed with flowers. The furniture is either custom-made or sourced from antique dealers nearby. Florette\u2019s menus are mercurial and defy categorisation \u2013 try clams from the Pacific coast served with fried curry leaves or chicken croquettes with house-made marinara sauce. <br \/><a href=\"https:\/\/florettetoronto.com\" type=\"link\" id=\"florettetoronto.com\" rel=\"nofollow noopener\" target=\"_blank\">florettetoronto.com<\/a><\/p>\n<p class=\"wp-block-paragraph\">Apollo Inn<br \/>Melbourne<\/p>\n<p class=\"wp-block-paragraph\">Chef Andrew McConnell and partner Jo McGann\u2019s Apollo Inn is a mere 50 metres from their beloved bar and restaurant Gimlet, the site of one of Melbourne\u2019s first ever public houses. This intimate cocktail bar has new interiors by Sydney-based design firm Acme and draws inspiration from the timeless bars of Europe, with low lighting, wood panelling and a bijou 30 covers. <\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" height=\"730\" width=\"1095\" src=\"https:\/\/www.europesays.com\/germany\/wp-content\/uploads\/2026\/06\/apolloinn-008_earlcarter.jpg\" alt=\"Elegant bar interior with wooden counter, black bar stools, and bottles displayed on shelves behind\" class=\"wp-image-47770\"  \/><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" height=\"730\" width=\"487\" src=\"https:\/\/www.europesays.com\/germany\/wp-content\/uploads\/2026\/06\/apollo-inn-jo-mcgann-hr-4415.jpg\" alt=\"Red cocktail being poured from bottle into coupe glass on wooden bar surface\" class=\"wp-image-47771\"  \/><\/p>\n<p class=\"wp-block-paragraph\">McConnell kept the menu tight and a little more rustic with 10 or so dishes that change regularly but can include a perfect prawn cocktail, oysters on ice or a classic beef carpaccio. There are four martinis on the menu, while house cocktails include a picon bi\u00e8re (chinotto, blood orange and juniper with French lager), a stinger (brandy and cr\u00e8me de menthe) or a classic champagne royale. <\/p>\n<p class=\"has-inverted-color has-text-color has-link-color wp-block-paragraph wp-elements-b8465ba49794a4500be1fb57bc51fe03\">\u201cThe vision has always been in the back of our minds,\u201d says McConnell. \u201cWe wanted to create a place that can happily be the night out or the before or after: one that was more focused on the drinks than on food.\u201d <br \/><a href=\"https:\/\/apolloinn.bar\" type=\"link\" id=\"apolloinn.bar\" rel=\"nofollow noopener\" target=\"_blank\">apolloinn.bar<\/a><\/p>\n<p class=\"wp-block-paragraph\">Bostich<br \/>Berlin<\/p>\n<p class=\"wp-block-paragraph\">Bostich opened in late spring but feels like it has been in Berlin\u2019s Wilmersdorf for ever. Swiss-born restaurateurs Simon B\u00fchler and Yllnora Semsedini wanted to create a place in which diners would linger. \u201c[For those] evenings when you dress nicely because you are looking forward to time well spent with friends,\u201d as B\u00fchler puts it. \u201cAnd with food that everyone enjoys.\u201d <\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" height=\"730\" width=\"728\" src=\"https:\/\/www.europesays.com\/germany\/wp-content\/uploads\/2026\/06\/img_5705.jpg\" alt=\"Elegant table setting at Bostich restaurant featuring lobster roll, sliced fennel salad, and cocktails\" class=\"wp-image-47773\"  \/><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" height=\"730\" width=\"733\" src=\"https:\/\/www.europesays.com\/germany\/wp-content\/uploads\/2026\/06\/img_6013.jpg\" alt=\"Interior of upscale restaurant with dark wood bar, pendant lighting, bentwood chairs and checkered floor tiles\" class=\"wp-image-47772\"  \/><\/p>\n<p class=\"has-inverted-color has-text-color has-link-color wp-block-paragraph wp-elements-da7d6c9120546cf1faab040f514673a1\">For Bostich that means fresh oysters and shrimp cocktails in the afternoon sun and unpretentious but high-end classics, such as buttery carrots, mashed potatoes and veal served in a fetching copper pot. Other highlights include tender lobster roll, truffle risotto and, to finish, a cr\u00eape suzette (flamb\u00e9ed at the table by the brilliantly named chef Sarah Fillet. Design-wise there\u2019s a whiff of 1930s France, with Maison Jansen palm-tree lamps, red wicker chairs and round bistro tables. <br \/><a href=\"https:\/\/bostich.berlin\" type=\"link\" id=\"bostich.berlin\" rel=\"nofollow noopener\" target=\"_blank\">bostich.berlin<\/a><\/p>\n<p class=\"wp-block-paragraph\">Sturehof<br \/>Stockholm<\/p>\n<p class=\"wp-block-paragraph\">Sturehof, founded in 1887, has just reopened at its original address at 2 Stureplan in central Stockholm. The restaurant, which is spread across two floors, now seats 400 with a further 150 covers to come in 2026. <\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" height=\"730\" width=\"487\" data-id=\"47775\" src=\"https:\/\/www.europesays.com\/germany\/wp-content\/uploads\/2026\/06\/230713_monocle_sturehof_0666.jpg\" alt=\"Two white plates of gourmet food - one with breaded items and vegetables, another with fish and greens\" class=\"wp-image-47775\"  \/><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" height=\"730\" width=\"487\" data-id=\"47774\" src=\"https:\/\/www.europesays.com\/germany\/wp-content\/uploads\/2026\/06\/230713_monocle_sturehof_0313.jpg\" alt=\"Two men in formal uniforms, one in red with gold trim and one in white chef's coat, standing outside restaurant\" class=\"wp-image-47774\"  \/><\/p>\n<p class=\"wp-block-paragraph\">The space has been carefully updated by Stockholm practice Dinelljohansson: expect white tablecloths, oak panelling, terrazzo floors and black leather seating. There\u2019s a book-lined dining room upstairs where books not only add to the atmosphere but are available to buy. Downstairs, there\u2019s a snug 16-cover bar. <\/p>\n<p class=\"has-inverted-color has-text-color has-link-color wp-block-paragraph wp-elements-f5f84fcb0b146b11db9999b6d7db10da\">Seafood is still the speciality; Monocle sampled crayfish from Sm\u00f6gen on the west coast, served with radishes grown in the kitchen\u2019s farm in northern Stockholm. Classics such as turbot with butter sauce or fresh Baltic herring caught by Sturehof\u2019s own fishing boat are never far away. Occasionally, game hunted by the founder, PG Nilsson (whose restaurant group is an investor in Monocle), appears on chef Michael Larsson\u2019s always-pleasing menu.<br \/><a href=\"https:\/\/sturehof.com\" type=\"link\" id=\"sturehof.com\" rel=\"nofollow noopener\" target=\"_blank\">sturehof.com<\/a><\/p>\n<p class=\"wp-block-paragraph\">Ember<br \/>Berlin<\/p>\n<p class=\"wp-block-paragraph\">After stints at Copenhagen\u2019s Noma and Berlin\u2019s Ernst, chef Tobias Beck decided to focus on cooking on an open fire. After a few years of pop-ups across Berlin, Ember has at last found a home on a rooftop in Kreuzberg. Ember\u2019s four-course tasting menu features dishes such as young asparagus with herb-packed sauce, slow-cooked lamb tacos and flaky wood-fired mackerel, all washed down by crisp natural wine.<br \/><a href=\"https:\/\/ember-ofc.com\" type=\"link\" id=\"ember-ofc.com\" rel=\"nofollow noopener\" target=\"_blank\">ember-ofc.com<\/a><\/p>\n<p class=\"wp-block-paragraph\">\u2019Swill\u2019 magazine<br \/>Sydney<\/p>\n<p class=\"wp-block-paragraph\">The second issue of Sydney-based Swill magazine brings to light the often overlooked moments of everyday culinary culture. \u201cIt\u2019s about the pure joy, play and creativity that exist in the hospitality industry,\u201d says journalist and editor Myffy Rigby, who launched the large-format quarterly in 2022 after a spell at Time Out Australia and other publications. <\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" height=\"730\" width=\"973\" src=\"https:\/\/www.europesays.com\/germany\/wp-content\/uploads\/2026\/06\/monocle14088.jpg\" alt=\"Black and white illustrated cover of SWILL magazine featuring various food and drink items including cakes, cocktails and fruit\" class=\"wp-image-47776\"  \/><\/p>\n<p class=\"has-inverted-color has-text-color has-link-color wp-block-paragraph wp-elements-14effdfd3872560d32aef6b3deea481e\">Behind the cover \u2013 an artful tableau by illustrator Allie Webb \u2013 readers will find a feature on the Mexican torta, a defence of the maligned Long Island iced tea, a fond farewell to Sydney institution Frankie\u2019s Pizza, and plenty more besides. Drain, cool under cold water and then drain again. <\/p>\n<p class=\"wp-block-paragraph\" id=\"h-2\">2.<br \/>Cut the baguette into eight slices. Place on a baking sheet, drizzle with a little olive oil and toss to coat. Grill for 2 minutes on each side. Set aside to cool. <\/p>\n<p class=\"wp-block-paragraph\" id=\"h-3\">3.<br \/>Place the peas in a bowl and mash with a fork. Mix in the crab meat, tarragon, black pepper and a drizzle of olive oil, as well as the zest and juice of half of the lemon. <\/p>\n<p class=\"wp-block-paragraph\" id=\"h-4\">4.<br \/>Spread a little cr\u00e8me fra\u00eeche on every toasted slice of baguette.
