Expanding outside of Dublin for the first time

It’s great news for Cork foodies as the chain with Ireland’s ‘best friend chicken sandos’ is coming to a very popular Leeside spot.
Dublin-founded food business Mad Egg have confirmed they are launching a location at Cork’s Marina Market. Jobs listings for their new expansion are already available, as the group looks to hire full-time kitchen and front-of-house staff.
The chain, which started with two Dublin city centre restaurants in 2018, offers a menu packed full of fried chicken dishes like tenders, burgers made with soft and fluffy ‘Amish roll’ buns, and chicken-and-waffles stacks. Other popular options include their loaded fries and mac and cheese sides, as well as their cheescake and brownie desserts.
The chain currently has five locations, including one in Dublin Zoo, and the Cork spot will be their first outside of Ireland’s capital. The business was founded by Dub Conor Sheridan and Stephen O’Reilly, and since launching, their food has won them a number of glowing titles. This includes ‘Best Chicken in Ireland’ at the Deliveroo Restaurant Awards 2025, and Best Burger & American at this year’s Just Eat Awards.
The new spot will be a welcome addition to the many lovely spots at Leeside’s Marina Market – but this isn’t the only big news about the location recently. This month, the family team behind the award-winning Delhi2Cork Marina Market stall launched a new offering at the popular Leeside market.
The Coromandel food spot launched at the bustling indoor market on Saturday, bringing a fresh menu packed with South Indian delicacies. Its menu has a big focus on ‘dosas’ – savoury, crispy pancakes made from a fermented rice and lentil batter, that are usually served as street food.
