That doesn\u2019t mean  all is lost for diners who do their \u201cTwixmas\u201d homework, however, with some special experiences still on the table.<\/p>\n<p class=\"c-paragraph paywall \">One top option in the capital comes courtesy of wild goose chef Sam Kindillon, who has returned to his native <a href=\"https:\/\/www.irishtimes.com\/ireland\/dublin\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/ireland\/dublin\/\">Dublin<\/a> after more than a decade cooking in Copenhagen and Berlin. <\/p>\n<p class=\"c-paragraph paywall \">With the support of former mentor John Wyer, Kindillon will take over the kitchen at <a href=\"https:\/\/www.irishtimes.com\/food\/restaurants\/2022\/03\/31\/forest-avenue-deli-wine-bar-review-the-prices-in-this-dublin-wine-bar-had-me-worried-but-the-menu-is-top-quality-1.4834051\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/food\/restaurants\/2022\/03\/31\/forest-avenue-deli-wine-bar-review-the-prices-in-this-dublin-wine-bar-had-me-worried-but-the-menu-is-top-quality-1.4834051\/\">Forest Avenue<\/a> in Leeson Street between December 30th and January 10th for a total of nine services. <\/p>\n<p class=\"c-paragraph paywall \">Diners can expect a modern pescatarian or vegetarian six-course menu, including bread and snacks with a sharing main course, for around the \u20ac80 mark.<\/p>\n<p class=\"c-paragraph paywall \">\u201cI didn\u2019t get to cook a lot of fish in Berlin, and I\u2019m keen to get stuck in with this menu,\u201d says Kindillon, who has most recently been acting head chef at Note Dublin and will be remembered from his time in The Pigeon House, Clontarf.<\/p>\n<p class=\"c-paragraph paywall \">Kindillon says Berlin, where he was head chef at brasserie-style Ora, isn\u2019t as vibrant as Dublin. He now sees his career progressing back at home.<\/p>\n<p class=\"c-paragraph paywall \">\u201c[Berlin is] a great city, but customers are reluctant to spend money on casual fine dining, while trade during the summer months is harder as Berliners prefer to sit outside with their beers and therefore eat more casually,\u201d Kindillon says.<\/p>\n<p class=\"c-paragraph paywall \">He speaks proudly of the success of his friends and peer chefs who have walked similar paths such as <a href=\"https:\/\/www.irishtimes.com\/food\/2025\/09\/03\/sneak-preview-chef-cuan-greenes-collison-backed-laois-restaurant-and-guesthouse-takes-shape\/\" target=\"_self\" rel=\"nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/food\/2025\/09\/03\/sneak-preview-chef-cuan-greenes-collison-backed-laois-restaurant-and-guesthouse-takes-shape\/\">C\u00fa\u00e1n Greene, formerly of Bastible and the founder of \u00d3m\u00f3s<\/a>, and <a href=\"https:\/\/www.irishtimes.com\/food\/2025\/11\/26\/irish-restaurants-comet-and-beau-added-to-michelin-guide\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/food\/2025\/11\/26\/irish-restaurants-comet-and-beau-added-to-michelin-guide\/\">Kevin O\u2019Donnell, head chef at Comet<\/a>, both of whom worked at a high level abroad for a period.<\/p>\n<p class=\"c-paragraph paywall \">Kindillon\u2019s move to cook over the Christmas period will surely be welcomed by those who will be glad to get back into restaurants after the big day. Also in Dublin, Bar Italia will be open throughout Christmas except for the Christmas Day and St Stephen\u2019s Day, while <a href=\"https:\/\/www.irishtimes.com\/food\/restaurants\/review\/2025\/06\/12\/notions-restaurant-review-this-is-intelligent-considered-food-without-ceremony\/\" target=\"_blank\" rel=\"noreferrer nofollow noopener\" title=\"https:\/\/www.irishtimes.com\/food\/restaurants\/review\/2025\/06\/12\/notions-restaurant-review-this-is-intelligent-considered-food-without-ceremony\/\">Two Pups and Notions<\/a> on Francis Street will be open from the 27th. Fish &amp; Bean in Sligo reopens on the 27th, while Everett\u2019s<b> <\/b>in Waterford and Square in Dundalk, Co Louth, will be open from the 28th. The beautiful Homestead Cottage in Doolin, Co Clare, will also be an option, as will Wine &amp; Brine in Moira, Co Armagh, well known for its game cooking at this time of year.
