is balancing rich, savoury flavours with something sweet.

“We’re going to have some fun with this and make it absolutely delicious,” he said, before showing how a spoonful of cranberry sauce completely transforms the sandwich.

The toastie uses everyday ingredients many Irish households already have on hand after Christmas, including leftover turkey, stuffing, Brussels sprouts and cheese.

Ingredients

Four slices of bread

70g leftover cooked meat, such as turkey, ham, stuffing, or nut roast

60g Cheddar – that lifts the whole sandwich – then pile on the filling and top with another slice of bread.

Lightly butter the outside of the sandwich and cook in a large non-stick pan over a medium heat for around three minutes on each side, pressing down until golden and crispy.

Warm the leftover gravy in a separate pan to use as a dip, then grate a little extra cheese over the toastie and cook until melted.

For a simple side, slice the apple into matchsticks and toss with watercress, olive oil, vinegar, salt and pepper.
