{"id":368761,"date":"2026-03-05T07:04:15","date_gmt":"2026-03-05T07:04:15","guid":{"rendered":"https:\/\/www.europesays.com\/ie\/368761\/"},"modified":"2026-03-05T07:04:15","modified_gmt":"2026-03-05T07:04:15","slug":"derry-couple-honouring-a-grandfathers-legacy-with-gluten-free-stout","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/ie\/368761\/","title":{"rendered":"Derry Couple honouring a grandfather\u2019s legacy with gluten-free stout"},"content":{"rendered":"<p>A new gluten-free stout has arrived in the north-west, which is being made in Donegal.<\/p>\n<p>Produced by husband and wife couple Tommy and Ciara Carlin from <a href=\"https:\/\/www.derrynow.com\/section\/976\/sport\" rel=\"nofollow noopener\" target=\"_blank\">Derry<\/a> city, the idea for the drink came after Tommy&#8217;s Coeliac diagnosis in 2024.<\/p>\n<p>&#8220;I&#8217;ve always loved my stout and when I got my diagnosis, it was one of the first things I noticed there was no alternative for,&#8221; Tommy said. &#8220;I was drinking gluten-free beer or cider, but it just wasn&#8217;t the same. So Ciara and I decided we would look into brewing and see if it was possible to brew a gluten-free stout.<\/p>\n<p>Despite no previous experience in brewing, the pair undertook a huge research project while networking with brewers, to work on a recipe and brewing style with Otterbank Brewing, Muff.\u00a0&#8220;It&#8217;s a tough job testing beers, but I volunteered myself,&#8221; Tommy laughs.<\/p>\n<p>The journey to the finished product was a personal one, and the name reflects Tommy&#8217;s own memories of home.<\/p>\n<p><strong>READ NEXT: <a href=\"https:\/\/www.derrynow.com\/story-telling\/pictures---videos\/2028116\/in-pictures-silver-jubilee-celebrations-as-doire-trasna-marks-25-years-in-the-waterside.html\" target=\"_blank\" rel=\"noopener nofollow\">IN PICTURES: Silver Jubilee celebrations as Doire Trasna marks 25 years in the Waterside<\/a><\/strong><\/p>\n<p>&#8220;The name is from my granda, Paddy McKeever, he used to drink in the Beechtree Bar in Derry,&#8221; Tommy said. &#8220;If you look at the label, there&#8217;s an illustration of a beech tree. When I think of stout, I think of my granda McKeever when I was a child. So it came to me very naturally.&#8221;<\/p>\n<p>As more and more customers are seeking gluten-free alternatives to their usual round, dozens of bars around the northwest have already expressed interest in stocking the stout. &#8220;Every hotel, bar and restaurant we&#8217;ve reached out to has given us a really warm reception,&#8221; Ciara said.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.europesays.com\/ie\/wp-content\/uploads\/2026\/03\/WhatsApp_Image_2026-03-02_at_21.20.27_(1)-1772526086834.jpeg\" width=\"600\" height=\"800\" caption=\"false\"\/><\/p>\n<p>&#8220;We know that rates of gluten intolerance are rising and people still want to enjoy a wee stout post-diagnosis.
