Because cheese can take a year (or several) to mature, dairy farms can receive 60 to 80 percent of the value of the cheese up front and Credem stores the cheese in climate-controlled vaults. But in the face of Italy\u2019s devastating <a href=\"https:\/\/www.popularmechanics.com\/science\/health\/a65912646\/heatwaves-human-aging\/\" target=\"_self\" data-vars-ga-outbound-link=\"https:\/\/www.popularmechanics.com\/science\/health\/a65912646\/heatwaves-human-aging\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"heatwave\" data-node-id=\"7.3\" class=\"body-link css-vxmlos emevuu60\" rel=\"nofollow noopener\">heatwave<\/a>, the bank was forced to rush to upgrade cooling systems, boilers, insulation, and even to build out renewable power, as the vaults\u2019 energy consumption climbed 30 percent at the height of the heatwave, <a href=\"https:\/\/www.euronews.com\/business\/2026\/08\/11\/extreme-heat-strains-italys-cheese-banks-where-parmigiano-backs-farm-loans\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.euronews.com\/business\/2026\/08\/11\/extreme-heat-strains-italys-cheese-banks-where-parmigiano-backs-farm-loans\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"according to Euronews\" data-node-id=\"7.5\" class=\"body-link css-vxmlos emevuu60\" rel=\"nofollow noopener\">according to Euronews<\/a>.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"8\" class=\"css-1ood0zq emevuu60\">Keeping these wheels cool is of the utmost importance. Two warehouses in Northern Italy contain approximately 500,000 wheels of cheese. When the wheels arrive, they\u2019re first <a href=\"https:\/\/www.popularmechanics.com\/science\/a45193829\/lcls-ii-x-ray\/\" target=\"_self\" data-vars-ga-outbound-link=\"https:\/\/www.popularmechanics.com\/science\/a45193829\/lcls-ii-x-ray\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"x-ray-scanned\" data-node-id=\"8.1\" class=\"body-link css-vxmlos emevuu60\" rel=\"nofollow noopener\">x-ray-scanned<\/a> to ensure there are no defects and then checked for quality every week by experts who tap the wheels with small hammers, a method to detect if any flaws have developed during <a href=\"https:\/\/www.popularmechanics.com\/science\/archaeology\/a22762077\/researchers-find-3000-year-old-cheese\/\" target=\"_self\" data-vars-ga-outbound-link=\"https:\/\/www.popularmechanics.com\/science\/archaeology\/a22762077\/researchers-find-3000-year-old-cheese\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"the aging process\" data-node-id=\"8.3\" class=\"body-link css-vxmlos emevuu60\" rel=\"nofollow noopener\">the aging process<\/a>. The entire cheesy collection is worth roughly $350 million, and the U.S. is the largest foreign market for this immense reserve of parmesan, but the impacts of this summer\u2019s unrelenting heat extend far beyond these two warehouses.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"9\" class=\"css-1ood0zq emevuu60\">Higher temperatures also impact the production of the world-famous cheese in the first place. As <a href=\"https:\/\/www.popularmechanics.com\/science\/environment\/a71884392\/climate-change-sea-sponge-timeline-science\/\" target=\"_self\" data-vars-ga-outbound-link=\"https:\/\/www.popularmechanics.com\/science\/environment\/a71884392\/climate-change-sea-sponge-timeline-science\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"temperatures get hotter and hotter\" data-node-id=\"9.1\" class=\"body-link css-vxmlos emevuu60\" rel=\"nofollow noopener\">temperatures get hotter and hotter<\/a>, cows tend to lie on the ground, eat less grass, and as a result, they produce 10 percent less milk. Of course, extended drought also impacts the grasses that grow in the five provinces allowed to produce parmesan, which is ultimately the engine that drives the entire cheese-making industry.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"11\" class=\"css-1ood0zq emevuu60\">\u201cExtreme heat impacts milk\u2019s quality and quantity,\u201d Nicola Bertinelli, president of the Parmigiano Reggiano Consortium, <a rel=\"noopener nofollow\" href=\"https:\/\/www.reuters.com\/business\/environment\/extreme-heat-threatens-italys-parmesan-heartland-2026-07-13\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.reuters.com\/business\/environment\/extreme-heat-threatens-italys-parmesan-heartland-2026-07-13\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"told Reuters\" data-node-id=\"11.1\" class=\"body-link css-vxmlos emevuu60\">told Reuters<\/a>. \u201cIf it doesn&#8217;t rain, grass doesn\u2019t grow, hay cannot be produced, and it\u2019s impossible to obtain the milk needed to make the cheese.\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"12\" class=\"css-1ood0zq emevuu60\">The consortium tells <a rel=\"noopener nofollow\" href=\"https:\/\/www.axios.com\/2026\/08\/16\/italy-cheese-heat-banks\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.axios.com\/2026\/08\/16\/italy-cheese-heat-banks\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Axios\" data-node-id=\"12.1\" class=\"body-link css-vxmlos emevuu60\">Axios<\/a> that the production of Parmigiano Reggiano isn\u2019t currently at risk, but this summer\u2019s extreme heat has laid bare serious vulnerabilities at the heart of this 800-year-old industry.
