Davidson County Japanese, barbecue restaurants receive B sanitation grades; one earns A on reinspection | Business

Two Davidson County restaurants received B health grades during the June inspections by the Davidson County Department of Health.

Kabuki Japanese Steak House on Cotton Grove Road in Lexington and Tarheel Q on W. U.S. Highway 64, each received 87.5 grades. Both eateries are in Lexington. Tarheel Q was reinspected on June 12 and scored an A, 97.5.

Among the violations recorded by the health inspector at Kabuki Japanese were:

Employees drinks stored on top of the shrimp sauce.Employee used bare hands to pout cooked noodles on the grill.Employee observed cutting up broccoli out of a produce box and then storing in a clean container without washing it.The gasket on the walk-in cooler is torn/poor repair.Area behind the sushi bar needs to be cleaned.

At Tarheel Q, the violations noted by the inspector when it scored a B rating on June 9 include:

Employee drinks stored on a table in the food prep areaAn employee put raw Philly meat on the prep table then went to ready to eat bread. Had her take off off the gloves, wash her hands and then put on new gloves.There were no paper towels or soap at the hand wash sink.Foods, such as barbecue were recorded at 112 degrees in a hoy holding unit that should have been 135 degrees.Soiled wiping cloths were sitting throughout the kitchen area rather than being stored in sanitizer when not in use.Residue was noted on the hot hold cabinets holding pork shoulders, and residue noted on reach-in coolers and freezers and on the outside of large equipment.

Restaurant grades are based on a 100-point scale. Each restaurant starts with a 100 score and loses points for violations. Not every restaurant is inspected each month. The restaurants are supposed to be inspected on a rotating basis three to four times per calendar year.

Here’s the grading scale used by Davidson County Health Department inspectors: A = 100 to 90 points; B = 89.5 to 80 points; C = 79.5 to 70.

If a restaurant scores less than 70, it will be closed until corrective actions are taken.
