South Korean operator S&amp;C Restaurant Holdings (S&amp;C) opened the &#8220;Chipotle Gangnam&#8221; store on the 1st. The flagship location, situated in a prime commercial area along Gangnam-daero, seats 96 and begins regular operations on the 2nd.<\/p>\n<p>This marks the first time Chipotle has established a joint venture (JV) with a local company for overseas expansion. Chipotle&#8217;s headquarters partnered with Big Bite Company, an affiliate of Sangmidang Holdings, to establish S&amp;C. The move is interpreted as an intent to control food quality and brand experience by directly investing equity, rather than simply handing over operating rights.<\/p>\n<p>Sangmidang Holdings has a track record of successfully leading Shake Shack&#8217;s entry into South Korea. Hur Hee-soo, Chief Vision Officer (CVO) of Sangmidang Holdings, first encountered Shake Shack in New York in 2011, then spent five years persuading the company&#8217;s headquarters before opening the first South Korean location in Gangnam in 2016. Shake Shack has since expanded its Asian business to 37 stores in South Korea, 11 in Singapore, and 4 in Malaysia. This operational capability is the backdrop for Chipotle&#8217;s selection of Sangmidang Holdings as its partner.<\/p>\n<p>At a press briefing on the 1st, CVO Hur said, &#8220;Chipotle has no tolerance for &#8216;good enough.&#8217; We set the starting point of our South Korean business not at the moment of opening a store, but at the moment we secured a high-quality ingredient supply chain.&#8221; The South Korean locations source some fresh ingredients domestically\u2014including rice, cilantro, jalape\u00f1os, and onions\u2014and Chipotle and Big Bite Company plan to pursue joint ingredient development going forward.<\/p>\n<p>Replicating the U.S. Experience Exactly<\/p>\n<p>The South Korean locations focus on &#8220;recreating the Chipotle experience exactly as it exists in the United States&#8221; rather than localization. No separate Korean-style menu items were developed; the same ingredient standards, cooking methods, and ordering format used in the U.S. are applied. Customers choose from burritos, burrito bowls, tacos, salads, or quesadillas, then select a main protein\u2014chicken, steak, barbacoa, carnitas, sofritas, or veggie\u2014and customize with white or brown rice, black or pinto beans, salsa, cheese, sour cream, and vegetables according to preference.<\/p>\n<p>Pricing is divided into three tiers based on the main protein. All domestic locations will be company-operated. CVO Hur emphasized, &#8220;Providing consistent quality and experience at every location is more important than rapidly increasing store count.&#8221;<\/p>\n<p>The first Singapore location will open in the first half of next year, marking the full-scale launch of the Asian business. S&amp;C has secured operating rights for both South Korea and Singapore. The plan is to expand into Asian markets incrementally, building on the operating model established in South Korea.<\/p>\n<p>Scott Boatwright, CEO of Chipotle, said at the briefing, &#8220;South Korea is a market with high demand for diverse options, convenience, and food that is fresh yet served quickly. We determined it to be an ideal market to begin our Asian expansion.&#8221; He added, &#8220;We saw both the potential of the South Korean market and the capabilities of our partner.&#8221;<\/p>\n<p>South Korea&#8217;s Mexican Food Market: Opportunity and Risk<\/p>\n<p>The fact that South Korea&#8217;s Mexican dining market remains small is expected to serve as both an opportunity and a risk for Chipotle. Taco Bell first entered in 1991 and has repeatedly withdrawn and re-entered, with its domestic operator changing four times. On the Border, which arrived in 2007, was sold to a private equity firm in 2019.<\/p>\n<p>Chipotle&#8217;s success in South Korea is also a critical inflection point for Sangmidang Holdings, which is grappling with deteriorating profitability in its bakery business.
