{"id":52904,"date":"2026-07-10T03:32:31","date_gmt":"2026-07-10T03:32:31","guid":{"rendered":"https:\/\/www.europesays.com\/spain\/52904\/"},"modified":"2026-07-10T03:32:31","modified_gmt":"2026-07-10T03:32:31","slug":"alberto-blancos-new-cathedral-hill-restaurant-and-bakery","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/spain\/52904\/","title":{"rendered":"Alberto Blanco&#8217;s new Cathedral Hill restaurant and bakery"},"content":{"rendered":"<p>Lovers of Spanish cuisine and culture, rejoice!<\/p>\n<p>The <a href=\"https:\/\/www.twincities.com\/2025\/12\/19\/handsome-hog-closing-chef-justin-sutherland\/\" target=\"_blank\" rel=\"noopener nofollow\">former Handsome Hog space<\/a> at the corner of Selby and Western avenues in St. Paul is in the process of becoming a full-service Spanish restaurant called Tasca Madrid. A secondary business, <a href=\"https:\/\/www.instagram.com\/sanroman.mn\/\" target=\"_blank\" rel=\"noopener nofollow\">San Rom\u00e1n Bakery<\/a>, is currently operating out of the restaurant\u2019s side door.<\/p>\n<p>Owner Alberto Blanco is not from Spain \u2014 he grew up in Guatemala \u2014 but his grandfather was Spanish, and he\u2019s spent a lot of time there.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" lazyautosizes lazyload\" alt=\"skewers with olives, vegetables and pickles next to two glasses of vermouth\" width=\"480\" data- src=\"https:\/\/www.europesays.com\/spain\/wp-content\/uploads\/2026\/07\/STP-L-TASCA-01.jpeg\" data-attachment-id=\"12839180\" \/>Tapas at the new Tasca Madrid on Selby Avenue will be affordable and authentic, owner Alberto Blanco says. (Courtesy of Tasca Madrid)<\/p>\n<p>Tasca Madrid will serve about 50 different types of tapas, small dishes popular in Spain, but also meats and fish seared on a flat-top grill and even paella \u2014 which they hope to occasionally cook outdoors, on the restaurant\u2019s stellar patio.<\/p>\n<p>\u201cWe\u2019re hoping to bring more than the food, because the scene here has seen Spanish food before,\u201d Blanco said. \u201cIt\u2019s more about the way it\u2019s done, a more authentic approach.\u201d<\/p>\n<p>Blanco\u2019s hospitality experience is rich and varied \u2014 he has worked for such well-known Twin Cities chefs as Alex Roberts, Stewart Woodman and Hector Ruiz. He also had a restaurant called Angeline in Antigua, Guatemala, that was well-regarded enough to appear in the <a href=\"https:\/\/www.nytimes.com\/interactive\/2015\/04\/08\/travel\/36-hours-antigua-guatemala-interactive-map.html\" target=\"_blank\" rel=\"noopener nofollow\">New York Times<\/a> and other major publications, but the pandemic ended that endeavor.<\/p>\n<p>It also forced Blanco to re-evaluate his life. Four members of his family died in a single week from COVID.<\/p>\n<p>\u201cI had to come back and ended up working at a biodynamic farm in the state of Washington,\u201d Blanco said. \u201cWe had 10 acres, and we had an orchard, lots of apples, pears, grapes, we had a vineyard.\u201d<\/p>\n<p>The experience, he said, prepared him to come back to restaurants.<\/p>\n<p>\u201cIt was rewarding, physically and emotionally,\u201d Blanco said. \u201cIt saved me. I worked my way back to the Twin Cities once I was ready for facing people again. It was right at the time of (restaurants) reopening.\u201d<\/p>\n<p>He\u2019s been helping to open restaurants ever since, \u201ccollecting misfits,\u201d he said \u2014 people who want a different way of hospitality life that\u2019s more about creating a work family.<\/p>\n<p>Opening a Spanish restaurant isn\u2019t just about the food for Blanco \u2014 he\u2019s a lover of the culture as well and has even danced flamenco, which he hopes to bring to the restaurant at some point. (Courtesy of Tasca Madrid)<\/p>\n<p>\u201cPrep is the happiest cooking there is,\u201d he said. \u201cYou\u2019re chopping, talking with co-workers, talking about how the night went, gossiping.\u201d<\/p>\n<p>It also allows the kitchen to free itself from the brigade system, meaning there\u2019s more equality among kitchen staff instead of a hierarchy.<\/p>\n<p>Besides tapas and freshly prepared meats and fish, the restaurant will have a sherry program and will even make its own vermouth (called vermut in Spain, where many restaurants have a house version). And when you order a glass of sherry, vermouth or Spanish wine, it\u2019ll come with a little tapa, which is very Spanish \u2014 they never let you drink without having a little something to nibble on.<\/p>\n<p>Tapas at Tasca Madrid will also be affordable (small tapas start at $5), and offered in three portion sizes to accommodate everything from solo diners to larger groups.<\/p>\n<p>\u201cI really want people to feel like they can hang out with us three times a week, instead of just every six months,\u201d Blanco said. That\u2019s also a very Spanish thing \u2014 most residents have small apartments and spend most of their evenings at restaurants, grazing communally with friends and family.<\/p>\n<p>\u201cIn America, we shop; in Spain, they eat. (Courtesy of Tasca Madrid)<\/p>\n<p>Desserts will be created by Oscar Yoc Garcia, who happens to be Blanco\u2019s husband.<\/p>\n<p>You can already sample Yoc Garcia\u2019s work at San Rom\u00e1n Bakery, which offers pastries like Basque cheesecake, tarta de nata (little egg-custard tarts) and tarta de Santiago (a gluten-free almond cake), as well as breads, bocadillos (Spanish sandwiches), savory Galician empanadas, Spanish tortillas and a few salads.<\/p>\n<p>Tasca Madrid will open as soon as possible \u2014 they\u2019re in the process of obtaining a liquor license. Blanco said he hopes to welcome customers by mid-July.<\/p>\n<p>The bakery is open seven days a week from 7 a.m. to 3 p.m., and Tasca Madrid will be open from 3 p.m. to 10 p.m. weekdays and from 3 p.m. to midnight Friday and Saturday.<\/p>\n<p>Tasca Madrid\/San Rom\u00e1n Bakery: 173 N.
