Oklahoma City Chef Jason Heald<\/a> showcased his culinary creativity and invited a group of guests to sample tastes from Spain during a recent four-course wine dinner hosted by the Ambassador Hotel in Oklahoma City.\n<\/p>\n

Heald is executive chef of the Ambassador\u2019s Chalkboard<\/a> restaurant.\n<\/p>\n

Assisting him were Keith Livingston, representing the local family-owned wine importer Wine Cellars<\/a>, and Karole Cornelison<\/a> with the distributor, Premium Brands Wine & Spirits.<\/p>\n

I keep hearing about local restaurants<\/a> hosting wine dinners and inviting the community to purchase a ticket and participate. This Spanish Wine Dinner was the first I have attended, thanks to an invitation from organizers. I got to meet an interesting group of people at our table and enjoyed learning a little about the different wines and interesting foods.\n<\/p>\n

A glass of Mas Fi\u2019s Brut Cava from Catalonia\u2019s El Pened\u00e9s region greeted guests as they stepped in, and we started with a \u201cpintxos\u201d small-bites appetizer featuring imported feta cheese, a manzanilla olive and a Catalan grilled tomato dish.\n<\/p>\n

First course was grilled Spanish octopus paired with an Argentinian wine I had never heard of \u2013 Torront\u00e9s, a white wine from the Zuccardi vineyard. White wine (my favorite) was also the second course \u2013 a Monastrell wine from the Spanish vineyard Wrongo Dongo paired with beet carpaccio featuring pistachio, parsnip, fennel and herbs. Third course? A skirt steak with mushroom risotto with a red wine \u2013 Volver Single Vineyard Tempranillo. We finished it off with a cheesecake and fresh berries and a red reserve wine from Carlos Serres.<\/p>\n

The dinner was Heald\u2019s first wine dinner as executive chef at the Ambassador and the first held on the hotel\u2019s seventh floor instead of in Chalkboard just outside the hotel\u2019s entrance.\n<\/p>\n

Heald said dinners like this inspire him.\n<\/p>\n

\u201cEvents<\/a> like this really allow me to get back into the kitchen and have some fun,\u201d he said. \u201cI hope they inspire other people to want to cook, to want to learn about wine and to play around with different pairings.\u201d\n<\/p>\n

Heald, via the Ambassador Hotel\u2019s Chalkboard, is holding the next wine dinner featuring food and drinks from Italy on September 10. Stock & Bond is having a wine dinner on Monday, August 10, featuring Dearden Family Wines on the ground floor of The National, Autograph Collection in downtown Oklahoma City.
