John Munro has become head chef for the Number One at The Balmoral at Princes Street in Edinburgh. John has been senior sous chef at the restaurant since 2022.

Munro, who also works as the restaurant’s head beekeeper, has worked at a number of Edinburgh restaurants including The Black Swan, The Gannet East and Timberyard.

John said: “It is a huge honour to lead the kitchen at Number One. My focus is on showcasing Scotland’s exceptional ingredients while respecting the standards and identity that define the restaurant. I look forward to evolving the menu with the team and continuing to build on its legacy.”

During his time in the kitchen, John has gathered a reputation for dishes from local, high quality suppliers drawing inspiration from Scotland’s landscapes. Seasonal menus featuring locally sourced seaweeds and elderflower foraged by Munro are a key feature of the dishes.

Executive Chef of The Balmoral, Paul Hart, said: “John’s promotion is a natural next step. He has been instrumental in shaping Number One over recent years, and his approach to food, produce and sustainability reflects exactly where we want to go as a restaurant.

“His understanding of ingredients, suppliers and the natural environment around us will continue to shape an exciting future for Number One.”
