The former Sessions Arts Club head chef will launch her rooftop restaurant this autumn
Florence Knight, the game-changing chef who helped launch Sessions Arts Club and was previously head chef of Polpetto in her twenties, is opening her first solo restaurant, Lunette, this September. The 30-cover space on the 11th floor of the Nick Jones-owned St Clement hotel follows Cafe Clement as the latest buzzy food opening at 180 The Thames.
Knight has been working on the project since leaving Sessions Arts Club two years ago and, while exact dish details are still under wraps, we know the seasonal set menu will be “deeply personal” to the chef. She says: “My food is not about being ‘clean’ or ‘natural’. It is about being true to taste and form – creating dishes that excite me, and that I want to eat myself.”
Sessions Arts Club is one of the most beautiful restaurants in the city, and it looks like Knight is bringing her eye for design to Lunette, too. Plates are by Tetsuya Otani and Michel Francois, bespoke uniforms come from Alex Eagle Studio and handblown glassware is by Alexander Kirkeby, all set within the Brutalist framework of 180 Thames.
Knight certainly has a talent for memorable openings, so we’re expecting big things – and a lot of celebrity sightings – from this one.
