Flat Iron Square has a new addition in Papa Dak, a Korean fried chicken concept from Woongchul Park, chef-owner of Michelin-starred Sollip in London Bridge. It’s a change of pace for Park, trading tasting menus for crispy, double-fried chicken and a short selection of sides.
Two signature chickens headline the menu, both finished with a scattering of rice crisps for extra crunch. Korean Red is a classic yangnyeom-style chicken in a sticky, sweet and spicy glaze, while Guinness Black comes coated in a deep, savoury Guinness sauce, Park’s tongue-in-cheek love letter to London’s most-sold pint, minus the hangover. Alongside the chicken, there’s So-Tok So-Tok skewers pairing grilled smoked sausages with chewy Korean rice cakes, a Kole-Slaw sharpened with aekjeot and Korean chilli, and Pickled Kohlrabi with garlic and ginger.
There’s no dessert on the menu, but if, like us, you’ve got your big boy pants on, you’ll be happy to see Spring Street Pizza’s slice shop, also a new addition, right next door.
