It’s set to open in a former bank in Baldwin StreetRudy’s Pizza takes over former bank in Bristol with summer launch plan

Rudy’s Pizza Napoletana is set to bring its celebrated Neapolitan pizzas to Bristol, with plans confirmed for a new restaurant in the heart of the city this summer. The new venue will take over the long-vacant former Royal Bank of Scotland branch in Baldwin Street, which has stood empty since 2021.

Spanning 3,000 square feet, the site will accommodate 120 diners inside, with an additional 35 seats available outside – a welcome feature for the warmer months. The arrival of Rudy’s will also create up to 40 new jobs in the local area, with roles across management, front of house and pizzaiolo positions.

Recruitment is already underway, and the award-winning employer plans to host recruitment days ahead of the official opening.

Founded in Ancoats, Manchester in 2015, Rudy’s has built a cult following for its authentic Neapolitan pizzas, made using traditional techniques and ingredients sourced directly from Naples.

The Bristol opening marks the brand’s 34th site across the UK, under the ownership of hospitality group Mission Mars, which also operates venues including Albert’s Schloss and Albert Hall. Neal Bates of Rudy’s said: “We cannot wait to re-open the doors of this previously unloved site in Bristol and share our passion for Neapolitan pizza with future Rudy’s lovers in the city.

“With its energetic city centre, rich culture, and thriving food scene, Bristol feels like a perfect fit for us. We’re excited to join the incredible restaurants and bars already here and become part of what makes this city so special.” Rudy’s pizzas are made fresh daily using Caputo ‘00’ flour and fermented for at least 24 hours. Ingredients such as San Marzano tomatoes grown next to Mount Vesuvius and fior di latte mozzarella are central to their recipes.

The pizzas are cooked in a Stefano Ferrara oven for about 60 seconds, resulting in a light and airy crust, or cornicione. The restaurant will also offer classic Italian desserts and a full bar experience, serving iconic spritzes, local lagers and soft drinks, promising an all-round Neapolitan experience.
