The moment you soak them in water, the seeds believe that it is going to be planted to sprout and become a big tree. So, when you sprout, they have some carcinogenic chemical within them, it comes to the surface just beneath the skin, so that insects will not eat them up. So as you soak them, and then peel them off, the carcinogenic chemical is gone along with the peel.
