The former Wigan, Leigh, and Widnes forward is charged with a number of allegations, including rape, assault occasioning actual bodily harm, and perverting the course of justice.
Hock, aged 40 and of Leigh, has pleaded not guilty to all 10 charges before him, with his trial commencing this week at Manchester Minshull Street Crown Court.
However, the jury in his trial was discharged this week, and the trial has been adjourned to next year.
This is due to the judge presiding over the case falling ill, with the jury having heard two days of evidence.
A replacement judge told jurors that the original judge in the case would not be well enough to return to complete the trial.
As a result, he told the jury that the trial could not continue, and that they would be discharged.
Hock will next appear back before the crown court next month for a pre-trial hearing, and his trial has been scheduled to start again in May next year.
During his playing days, the forward began his career with hometown club Wigan Warriors in 2003, and he made almost 200 appearances for the cherry and whites.
He later went on to play for Widnes, Salford, Featherstone, Barrow, and Leigh.
Hock retired as a player in 2019 after making a total of 313 career appearances, scoring 81 tries.
In 2022, he set up a new business venture hiring out skips.
