Mollie’s, a popular UK-based motel and diner brand, is expanding its reach to Scotland with a new site set to open in Edinburgh Park by 2028. This marks the brand’s first venture into Scotland and is part of the growing Edinburgh Park development, a new urban quarter that is transforming a previously business-centered area into a mixed-use district with both commercial and residential spaces.
An Edinburgh Hospitality Newcomer Much to Celebrate
The latest Mollie’s site is located near Edinburgh Park Station, providing links to the city centre and surrounding region. The space will cover an estimated 73,000 square-feet site and feature approximately 200 rooms. Alongside some of the county’s quirky motel rooms, the property will have a diner with an outdoor patio, event and meeting spaces and ample parking (with electric vehicle charging).
Mollie’s has the style of old-school American motels, with a stylish, modern twist. The company’s philosophy is to offer guest rooms that are inexpensive but still decent. It will be the fourth site for Mollie’s – the current three include Bristol, Oxfordshire and the upcoming Manchester site.
