The team behind Brewski and Foldies are opening a new concept called BIG TRAY BBQ in Salford Quays
Favourites in Manchester’s food and drink scene have announced plans to open a brand new smokehouse that takes inspiration from the United States.
The creators behind much-loved venues Brewski and American Pies have unveiled details of its newest concept, which will be opening in Quayside in Salford Quays later this year.
BIG TRAY BBQ will serve up barbequed delights and smoked meats by weight, as well as a range of homemade sides and ‘standout’ sauces. Situated next to Kargo.MKT, the 5,235 sq. ft site is set to open this autumn.
With a core focus on smoke and spice, the restaurant will feature the likes of 16-hour beef brisket, hot honey jalapeño cornbread, jerk chicken sausages, ribs, and smoked birria lamb shanks, as well as loaded meat trays that will be perfect for sharing.
Co-founders James Daly and Steven Stockton-King said BIG TRAY BBQ is ‘inspired by all of our travels from Copenhagen to Paris to Texas, serving up big trays of bbq’, and has also been hailed as a culinary tour of all 50 states of the US.

Brewski started life with its debut venue in Chorlton back in 2017 with its North American comfort food, including poutine, buffalo hot chicken, and dirty fries. It now also has sites in Sheffield and Chester.
The brand is also behind sister concept American Pies, which is based in Ancoats, and serves up Chicago-style deep dish pizza with high-quality ingredients. They also run the Foldies sandwich shop, known for its unique folded stonebaked pizza dough creations, on Booth Street.
BIG TRAY BBQ will be inspired by trips to Copenhagen, Paris and Texas, and will also honour food from all 50 states of the US
Speaking about the new Salford Quays venue, James and Steven said: “We’re delighted to be launching our latest concept BIG TRAY BBQ at Quayside later this year. As a Manchester-based brand, it was important that our next chapter stayed true to our roots.
“We’re excited to bring something completely new to Quayside’s growing food scene and be part of what’s to come at the destination for the local community.”

BIG TRAY BBQ will open in the Autumn, and joins established favourites including Kargo.MKT, Pizza Express, and Turtle Bay.
