It’s one of Manchester’s most hotly-anticipated restaurant openings for 2025 and in a few weeks time, a brand new dining spot featuring a spectacular roof terrace will open its doors.
Located at the top of Gary Neville’s landmark St Michael’s development, global restaurant brand Chotto Matte will open this Autumn and boast stunning views of the city centre. Famed for its Nikkei cuisine and immersive dining experience, it has taken on the top floor of No.1 St Michaels just of Deansgate.
It marks the restaurant group’s first launch in the North of England, bringing its signature Japanese and Peruvian cuisine to Manchester’s thriving food scene.
The 502-cover restaurant will feature an expansive menu designed by Executive Chef, Jordan Sclare, who has travelled extensively to Peru to sample local Nikkei cuisine and culture combining both Japanese techniques with Peruvian ingredients.

Signature dishes include Sea Bass Ceviche, Nikkei Gyoza, Sato Maki Roll and Pollo Den Miso – a beautifully cooked miso marinated chicken with carrot, daikon and yellow chilli yogurt.
The famous Black Cod Aji Miso will also be on the menu as well as King Oyster Mushroom Tostadas consisting of pulled mushroom, smoked Aji Panca, guacamole, lime, and coriander.

Set to open early October, the team at Chotto Matte are now giving diners a chance to sample from its menu ahead of the launch.
The restaurant will host an exclusive sushi pop-up from 12pm on Friday, 5 September outside the restaurant at No.1 St Michael’s.
500 complimentary sushi boxes will be handed out on a first-come, first-served basis from a purpose-built 3 x 2.5 metre giant sushi roll structure – giving Mancunians the chance to try the brand before its official opening in mid-October.
Each sushi box will showcase a signature sushi roll, offering a taste of the dining experience the brand is famous for across its global locations in London, San Francisco, Miami and Doha.
One box will also feature a ‘golden ticket’ to the launch party event for the winner and a guest.

The pop-up is the first in a series of local activations leading up to the grand opening on Chotto Matte Manchester, set for Tuesday, 9 October.
Joining hospitality brands including Circolo Popolare and Grind Coffee at the swanky new development, Chotto Matte will feature a huge 348-capacity roof terrace, which will be accessible all year round with panoramic views across Manchester.
The design of the restaurant will feature a selection of bold graffiti-style murals in partnership with a local artist, open sushi and robata counters, two large private dining rooms and immersive lighting that evolves from day to night.

Chotto Matte Manchester will also boast two private dining rooms, one accommodating 12 people and the other holding 25, both with the ability to open onto the outdoor terrace.
Bookings for the new restaurant will go live for the restaurant on Monday, 8 September.
