Wales is home to some truly incredible restaurants, from Michelin star holders to mouth-watering burgers to insane street food to menus that change regularly, there is simply so much good food to enjoy. Now, one restaurant has been crowned the best restaurant in Wales at the AA Hospitality Awards 2025.

Gorse, a Michelin-starred modern Welsh restaurant in Pontcanna, Cardiff, has taken home the coveted title. Ran by Newport chef Tom Waters, the restaurant says: “We take inspiration from the amazing bounty of produce that surrounds us, creating thoughtful dishes from pristine ingredients.

“Dishes that celebrate our fishermen, growers, farmers, and local artisans.

“We aim to create an experience that speaks to our time and place by celebrating the best of what our country has to offer.”

Small but mighty Gorse has only 22 covers and Tom promised to bring “modern Welsh” tasting menus and “a taste of Wales on a plate”, with dishes cooked right in front of diners thanks to its open kitchen.

Tom landed his first role under the acclaimed Welsh chef Bryn Williams at Odette’s in London, before moving on to the highly acclaimed two Michelin-starred restaurant The Square under the legendary chef Phil Howard.

He then went on to become a sous chef at Michelin-starred Bonhams in Mayfair, before becoming part of the leadership team at Heston Blumenthal’s flagship restaurant, The Fat Duck, in Bray.

Now he is successfully running Gorse, which is only going from strength to strength since it opened in 2024.

First, the restaurant landed a spot in the prestigious Michelin guide before being awarded the famous Michelin star in early 2025.

Before opening the restaurant, Tom made it clear he was here to bring modern Welsh multi-course tasting menus to the Cardiff food scene, championing the best of Cymru in the process.

And this is exactly what the chef has achieved, in a simple but classy way.
