A bakery which routinely boasts queues down the street is preparing to begin a brand new venture. Pastille Bakery is nestled within a warehouse unit on Gibraltar Row, tucked away in an industrial estate and a number of car parks, described as “the epitome of a hidden gem”.

Pastille Bakery found its footing in the kitchen of founder Jamie Heffey’s home. With the help of his partner and mum, the three whipped up a storm to take tasty treats to markets and pop-ups where they continuously sold out.

Pastille Bakery opened its first fully realised venue in 2024. Despite its slightly off the beaten track location, it’s hugely popular – especially so when it announces collaborations with other bakers from across the region such as Manchester’s Finch Bakery or Liverpool’s Castro’s Cafeteria.

In a new venture for Pastille Bakery, the company is swapping buns for burgers as it heads into the takeaway business. A message from Pastille Bakery read: “Psst, we’ve been keeping a little secret…And now it’s time to spill!”

Bernie’s Burgers is located directly behind the Pastille Bakery venue on Bath Street. Signs are up directing guests to the new venue with the menu posted outside, ready for the grand opening on Saturday, October 11.

Standout items include the PB & J burger, with peanut butter and chipotle mayonnaise, bacon jam, streaky bacon and pickled jalapenos, the ranch friend burger, with hot honey, blue cheese ranch pickles and lettuce and the jerk chicken burger, with jerk BBQ sauce, coleslaw and pickles.

The menu also includes sides like fries, coleslaw, corn ribs and tenders alongside dessert shakes like Oreo Nutella and white chocolate Bueno. Anyone who visits this weekend will be given a free cookie with every order.

Pastille Bakery launched a brunch menu in the summer to the delight of fans excited to try the new dishes. Sharing the news with customers, the team at Pastille said: “Alright gang — it’s finally happening! Pastille Brunch is live. You know we don’t play when it comes to food and trust us, you’re gonna wanna try this!

“Think Eggs Benny, breakfast baps with chilli jam and French toast to name just a few dishes you can dive into. Weekend only, starting Saturday, 9.30am – 3.30pm, no need to book just rock up and bring a smile. First come first served.”

Since launching, the brunch spot has featured on the social media pages of a number of prominent Liverpool influencers, including Morgan Bold who described it as “the kind of brunch that’s worth waking up for”.

The brunch menu includes a “brekky bap”, avocado on toast, shakshuka, eggs royale and French toast served with a choice of streaky bacon, strawberries and cream and blueberries and creme fraiche.
