A completely new concept is being trialled in Liverpool by Pattersons

A Liverpool institution has launched a new sister site with £50 Sunday dinners on offer. Liverpool fried chicken business Pattersons has now started a new concept that the team hopes to take all over the UK if it thrives in the city.
The company was founded in 2015, with the first site occupying the old electrical store, Hastie and Patterson, on Gradwell Street, which has operated there for nearly four decades. Fast forward to today, and Patterson’s currently owns three more locations in Blackstock Market, Manchester’s Freight Island and Warrington’s Market Hall.
The business has also recently secured a place at Stack Newcastle which will open this autumn in the city’s Worswick Chambers.
However, much closer to home, the brand is experimenting with Pattersons’ Roast House. Located in Vauxhall’s Blackstock Market, the stall will serve the likes of loaded roasties, house meats, Yorkie folds as well as desserts and a kids option.

Operations manager Declan Carr, who lives in The Baltic Triangle, told the ECHO: “It’s something we have been developing for over a year. Everyone loves a roast dinner and we thought it aligned really well with the Patterson’s brand.
“We wanted to try it in our restaurant first, but then we decided to do it in Blackstone Market; it seemed like the perfect fit for it. There’s a bit of a gap in the market there, there isn’t anyone doing anything similar there, and so we took the chance.”
Over the last few weeks, Declan explained that the team has been “tweaking” the recipes, with them finally “nailing it on the head”. In line with this, the concept was launched this week on Wednesday, November 5.

The 33-year-old said: “The Pattersons’ stall at the market is now double the size. One half is fried chicken, and the other is Patterson’s Roast House, our new sister site.
“It’s the same team, the same branding, but something new. We had the Belly Buster tray, a £50 Sunday dinner tray for sharing, only on Sundays, but we’ve changed it now because of the demand on social media. The whole menu is available from Wednesday to Sunday now.
“We did a content day a few weeks ago and we were absolutely made up with the products and to see people feel the same, its so heartwarming. It shows the hard work has been worth it, it almost was a sense of relief to see the reaction.”
Declan said that the Pattersons’ team are determined to make the sister site a brand “in its own right”.
He said: “Blackstock is the testing ground for it but we are looking to expand elsewhere. It’s not a flash in the pan for the winter, it is something we are getting behind for the long term.”
