A Merseyside brewery has launched its first nitro stout which is now available in bars across the city. Bootle-based brewery, Colbier, launched what they claim is “Liverpool’s first smooth Nitro Stout” in November.

Colbier was established by Mike Corbett and Vik Williams in 2024, with sales manager Jason Menzies joining the team in 2025. The brewery has gone from strength-to-strength after being named the UK’s “Best new independent brewery” at the SIBA Business Awards 2025.

Now, they have added their nitro stout ‘Legato’ to their impressive collection of beers.

Jason told the ECHO that the team “decided to give it a crack” following the popularity of other stout brands such as Guinness, Beamish and Murphy’s.

He said: “What we want to tap into, of course, is the popularity of this style of drink.

“But we also noticed that no one else on Merseyside was producing one, of the other small independent breweries like Neptune and Black Lodge that we’ve got very close working relationships with.”

Jason said “feedback has been great” and people who have sampled a glass of their nitro stout were “particularly impressed with just how smooth it is”. It is available in city centre venues such as Black Cat on Parr Street, The Head of Steam on Hanover Street and The Grapes on Roscoe Street. It is also in Solomons Tap Room in Garston and North Park Tavern in Bootle.

He added: “We’ve always produced beers that we want to drink ourselves. So we’re really chuffed with how it’s turned out.

“Obviously there is a bit of trial and error involved when you’re devising a new recipe and it’s a style that we’ve never done before.

“We’ve made a lot of stouts in the time that we’ve been going and we’ve become quite renowned for our dark beers but to do it the Nitro way does have a few added scientific steps to it.

“We are really pleased with how it’s turned out. You’ve got this wonderful roasted barley undertone to it, and then like a smooth praline sweetness at the end.

“It makes it really, really drinkable. Very nice sort of winter warmer pint. You just imagine if you’re in a pub with a plush chair and an open fire, it’s the ideal kind of beer for that.”
