The award-winning bakery opened its doors in 2023

A small bakery on one of the city’s busiest roads has had people queuing out of the door. Shannon Humphries opened Take the Cake on Rice Lane in L9 around October 2022 after previously having a venue in Islington.
The 25-year-old had previously worked at a nursery where she continued baking with the children and then attended college, before making the decision to focus on her own business. The takeaway shop specialises in singular cakes, where customers can create their own boxes or pick up a sweet treat just for themselves.
Some of its bakes include chocolate fudge cake, cookies, cookie bars, brownies, school cake and more.
Shannon told the ECHO her passion for baking started when she was a child. She said: “I used to always bake with my nan as a kid, we always used to use ingredients, never a box mix. I just had a big sweet tooth, so if I ever felt like something I’d just make it myself.

“My nan used to be in the living room, and I’d be in the kitchen and she’d be like ‘Do you need help?’ and I’d be like ‘No’. I’d have the scales out and everything.”
Her passion has paid off, with her small shop winning the North West’s best bakery at England’s Business Awards in 2024. She has also had customers queuing along the road to get their hands on her cakes.
Shannon shared a video of at least 40 customers queuing on Christmas Eve, which saw the shop with a queue outside for four hours straight.
Shannon added: “Every time there’s an occasion, people are like ‘oh my God, you want to see the queue’ but because I’m behind a counter I can never see the queue.

“People sent me it and I was like ‘oh my God’ I didn’t actually know how big it was.”
She added: “We get some people who come in a couple of times a week. We have someone, he trains though so hasn’t been in for a while, but he’d come in every single day since we’d opened so nearly two years.
“He’d get any milk chocolate cookie or cookie bar.
“Our menu changes every other day, we prep loads at the start of the week and then whatever is selling more of, we’ll obviously try to put more of that out.”
