When Robert De Niro first dined at Nobu Matsuhisa’s Los Angeles sushi restaurant in 1988, who could’ve predicted it would start a friendship that spanned into a worldwide hospitality brand? Now boasting 36 Nobu Hotels and 56 Nobu Restaurants, it’s next opening a first-of-its-kind nature-led retreat in the Midlands.

Nobu, famous for its signature black cod with miso, can currently only be found in London, but will soon launch a new countryside destination across 185 acres of Rutland—partnering with the existing wellness-themed Woolfox members’ club in Stamford on the development.

“From the very beginning, our dream for Woolfox has been to create a place where people can slow down, reconnect, and spend meaningful time together away from the pace of everyday life,” said Chris Riddle, co-founder of Woolfox. “This partnership marks an exciting new chapter in that journey.

“Nobu is celebrated around the world not only for its exceptional cuisine, but for the care, warmth, and attention it brings to every guest experience. Together, we share a vision of creating something genuinely special, a place where the magic of Nobu can be experienced in a peaceful rural setting, offering something rare, memorable, and deeply personal for everyone who visits.”

Situated close to Rutland Water, aka the ‘playground of the East Midlands’, Nobu Woolfox is being described as a “new luxury lifestyle destination in the English countryside”. You can expect the new nature-led retreat to include lakeview rooms and suites, a Nobu restaurant and bar, a spa, and a gym.

“This is a truly special location in the heart of England, surrounded by rolling historic landscapes and quintessential English countryside,” said Trevor Horwell, CEO of Nobu Hospitality. “For the first time within our portfolio, we have the opportunity at Nobu Woolfox to create a special countryside retreat experience.”

This first-of-its-kind concept is thousands of miles (literally and figuratively) from the high-stakes excitement of Nobu at Caesars Palace in Las Vegas. Here, in the East Midlands, Nobu will pair its taste for luxury hospitality and world-class dining with a “slower, more restorative pace.” Although an opening date has yet to be announced.
