A popular Edinburgh restaurant has unveiled a new makeover ahead of the summer, with temperatures set to soar this weekend. It has also introduced a brand-new menu, with one of its highlights being a haggis burger with locally sourced haggis and whisky-infused onions.
As reported by the Daily Record, Scotland is set for scorching temperatures over the upcoming bank holiday weekend. The mercury is predicted to reach 20 degrees Celsius five days in a row, with temperatures in Edinburgh forecast to hit at least 21 degrees Celsius from Friday to Sunday.
Hard Rock Cafe Edinburgh has reopened its refreshed George Street terrace for summer, featuring enhanced outdoor seating and a new drinks-led terrace experience. The venue, which is situated at the heart of Edinburgh’s New Town, will also offer new jumbo margaritas.
Open from now until the end of August, the upgraded terrace features a more open layout and a stronger drinks-led offering that is designed for long lunches, after-work cocktails, and laid-back summer evenings. It is positioned on one of Edinburgh’s busiest streets, with the refreshed setup creating a more relaxed and social outdoor space for visitors, shoppers, and locals throughout the summer.
The terrace operates on a walk-in basis, and has been designed to be an easy and flexible outdoor destination for groups, couples and casual drop-ins. Customers can enjoy a range of cocktails and sharers, and they can even bring along their four-legged friends as the terrace is dog-friendly.

To coincide with the reopening, Hard Rock Cafe Edinburgh has also introduced a limited-time offering until May 31. The ‘Sun Out, Margs Out’ terrace package includes guaranteed outdoor seating and XL jumbo margaritas served in 36-ounce glasses and shareable Tex-Mex dishes designed for summer socialising.
Guests can choose from Baja California Blackberry, Mexico City Mango or Cancun Orange Cadillac margaritas. Meanwhile, Chips and Queso will also be served for sharing.
Hard Rock Cafe has also launched a ‘Sun’s Out, Guac’s Out’ offer, with guests receiving complimentary guacamole on days that temperatures reach 18 degrees Celsius or above. According to the restaurant, this will allow Edinburgh locals and visitors to make the most of the sunshine while it lasts.
The reopening also coincides with the launch of Hard Rock Cafe’s Fresh Beats menu, which is dedicated to local and seasonal dishes. Among the food on offer is a haggis burger that is layered with smashed beef patties, locally sourced haggis, whisky-infused caramelised onions, and cheese sauce.

The restaurant also states that cocktails will remain a significant focus during the summer season, with margaritas, classic cocktails, beers, and wines all forming part of the new terrace experience. These will be complemented by a casual and social atmosphere designed for daytime visits and early evening plans.
General Manager at Hard Rock Cafe Edinburgh Nick Chiverton said: “Reopening the terrace for summer is always a big moment for us, but this year feels especially exciting with the refreshed setup and enhanced seating. George Street always comes alive during the summer months, and we wanted to create a space that feels relaxed, social and somewhere people can genuinely enjoy spending time.
“Whether it’s cocktails after work, a spontaneous drink in the sun or somewhere to start an evening during the Fringe, the terrace has been designed to feel easy, welcoming and fun throughout the day and into the evening.”
