The team behind one of Bristol’s best loved restaurant venues has announced the opening date of their newest venture.

Renowned chef and restaurateur Sam Elliott will be expanding his already impressive restaurant portfolio with the highly anticipated launch of Prime by Pasture this summer.

Described as a new all-day dining restaurant, Prime will open on St Thomas Street in the heart of the city’s Redcliffe Quarter, on Monday, June 9.

It will serve up everything from expertly brewed coffee and stacked breakfasts in the morning, to indulgent burgers, signature sticky wings, and thick shakes throughout the day.

The new restaurant will also cater to early risers, with doors opening from 8am, and the menu is said to have been designed for anyone looking for a quick bite but made from scratch and to the highest quality.

This news comes following the massive success of Pasture Bristol, which opened in 2018, as well as Radius – a unique and exclusive dining experience, which opened in 2022.

Sam also boasts Pasture venues in Cardiff (which opened in 2020) and Birmingham (2024), the latter being the group’s biggest site to date, as well as other Cardiff venues – Parallel and Nightshade – which both opened in 2023.

Pasture also had a pop-up restaurant venue at the Bristol International Balloon Fiesta last year, which was hugely successful and will return alongside a Prime pop-up with an all day BBQ at the event this year.

Prime by Pasture will also feature an on-site butchery and deli at its new restaurant, enabling guests to enjoy top-quality beef both dining out and at home.

The butchery will offer Pasture steaks, house-made sausages, bacon, and pork belly, while the deli will stock fresh ingredients and artisan products. A takeaway service will also be available.

Staying true to Pasture’s roots, Prime by Pasture says it will be proudly championing grass-fed, ethically reared beef, sourced in partnership with Philip Warren and farms across the South West and Wales.

Owner Sam, whose reputation for ethically sourced, high-quality beef has cemented Pasture as a leading name in the UK dining scene, sees Prime by Pasture as a key evolution of his brand.

He said: “We first announced that we would be bringing Prime by Pasture to the city at the beginning of last year – but with the Birmingham opening to manage, plans got delayed. We’re now thrilled to be putting our attention back onto Bristol, going full steam ahead with getting the doors to Prime by Pasture open as soon as possible.”

Back in 2024, BristolLive visited the Pasture farm, just a stone’s throw from Ashton Court, to explore how the team select what they grow, harvest it and serve it up to restaurant guests.

Buttercliffe Farm, which isn’t open to the public, spanned a total of three acres at the time of our visit, and even includes its own vineyard with some 3,000 vines.
