Flagship restaurant Tom Lawson at The Psalter will open in the boutique hotel at the start of May and ‘will celebrate British produce at its peak’, according to the chef.
The exclusive tasting menu-only 32-cover restaurant will be open from Thursday to Saturday with dishes on the launch menu to include Isle of Wight tomatoes with watermelon and jalapeno; cauliflower cheese ‘not like Grandma B’s’; Wortley Estate lamb with wild garlic and a lamb fat terrine; and Yorkshire rhubarb with white chocolate and gingerbread.
The menu will be £95 per person with the option of a wine pairing for £70, with the wine offer oversee by Jak Bradley and Jonathan Steeper.
Lawson began his culinary journey as an apprentice at Sheffield City College and later went on to work at 26-cover Rafters Restaurant in the city.
Last year he left the restaurant to take on The Psalter.
Writing on the hotel’s website he says: “This new restaurant is a real passion project – it’s about returning to the roots of what makes fine dining exciting: seasonality, creativity and attention to every last detail.
“I’m incredibly proud of what we’re building at The Psalter and the dining room is the heart of that vision.”
