Ever look at sushi and think, ‘I wish I could eat this stood up on a cramped bus’? Well, now you can! The iconic Japanese cuisine has evolved many times over thousands of years, but after only getting popular in the UK about 30 years ago, it’s now been revolutionised by the Londoners, SushiDog.

Best known for its hand-held burrito-style sushi rolls, as well as sushi bowls and salads, it launched in 2018 to bring fresh, nutritious ingredients to the lunch rush. Better still, SushiDog lets you create your ultimate meal, with every bite made fresh to order and endless combinations to suit every taste.

Now, the customisable grab-and-go sushi spot looks to launch in the Midlands for the very first time, rolling into Birmingham’s Bullring in January 2026. Located on the upper level, the kiosk style venue will seat up to 25 customers and feature both a dine-in area and a convenient takeaway counter.

“We’re excited to bring SushiDog to Birmingham and introduce the concept to the city’s vibrant, creative community,” said Greg, co-founder of SushiDog. “Bullring’s right at the heart of the city, always lively, full of energy, and packed with people who love fresh, fun food – and SushiDog feels like a perfect fit.”

With a focus on “quality ingredients, bold flavours, customisation, and convenience”, SushiDog has gained a loyal following online and in person for its accessible sushi on the go. Perfect for shoppers, commuters, and sushi lovers, looking for a quick hit of flavour—and it doesn’t look too bad either, with SushiDog likely to be the next Instagram hit in the West Midlands.

Paul O’Brien, Director of Leasing & Commercialisation at Hammerson, commented: “SushiDog’s arrival will further enhance our unrivalled line-up of leading names in hospitality and leisure and reinforces Bullring & Grand Central’s status as a premier destination for dining and socialising.”

SushiDog will open at the Bullring in January 2026, with promotions to be announced soon.
