A new restaurant has opened in the Wirral from a decorated chef and his wife. Chef Tony Parkin and wife Laura opened DAISE earlier this month in a partnership between the 42-year-old chef and Open Restaurant Group (ORG).

The family has taken over the space that was formerly occupied by ORG-owned OXA in Rose Mount. DAISE, a nod to Tony’s daughter Daisy, is his debut solo restaurant. The small, intimate eatery is run by Laura at the front of house.

Tony told the ECHO: “The first few weeks have been incredibly busy for Laura and me, but it has been brilliant so far, and we look forward to establishing ourselves in the area as a neighbourhood favourite.”

Tony previously held a Michelin star at Cliff House Hotel in Waterford, Ireland, where he spent two years, before moving back in England at the start of 2025. His stint in Ireland featured on Apple TV’s Knife Edge: Chasing Michelin Stars.

Tony also appeared on BBC’s Great British Menu and brings with him a wealth of experience, having also won a Michelin star during his time at the Tudor Room at The Great Fosters Hotel in Egham.

The dad added: “I’m really excited to have my name above the door, along with opening a restaurant that will be personal for both myself and Laura and will give our guests a relaxed experience with high quality food and a warm welcome.”

ORG has eight sites including three AA Rosette-holding 8 By Andrew Sheridan in Liverpool, and Sow on the Netherwood Estate in Worcestershire. Others include Dishes in Prestatyn; The Bracebridge in Sutton Coldfield; and Black & Green, and Cofton on the Green in Barnt Green, Worcestershire.

Andrew Sheridan added: “Tony is a brilliant chef, and Open Restaurant Group is delighted to be able to support him and Laura in the opening of DAISE. We look forward to DAISE becoming a well-established and much loved restaurant in the area.”

The venue comes as Liverpool missed out once again on obtaining a Michelin star. At a ceremony on Monday, February 9, at the Convention Centre in Dublin, Michelin announced the recipient of its stars for 2026, with not a single one of the city’s top culinary destinations making the list.

Merseyside has only ever received a single Michelin star in its history, awarded to Huyton-born chef Marc Wilkinson for Fraiche in Oxton, which sadly closed in 2023.

Seven Liverpool restaurants are recommended in the Michelin Guide – recognised for their above-average dining standards and overall experience – and those recommended in the guide are often strong contenders to make the leap to star status. They are The Art School, Belzan, Nord, Pilgrim, Manifest, Vetch and ‘8’ by Andrew Sheridan.

Despite Liverpool’s wealth of worthy dining destinations, from cult favourites and experimental menus inspired from international travels, the city missed out on earning a star once again.

The nearest starred restaurants are found in Aughton, West Lancashire, which is home to Moor Hall, So-Lo and The Barn. Last year, Moor Hall reached extraordinary new heights by earning its third Michelin star – a rare achievement only a small number of restaurants can boast anywhere in the UK. The restaurant has retained all three stars this year, cementing its place among the country’s culinary elite.
