But for their sister venue, it took just eight months.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">Earlier this month, <a aria-label=\"\" class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.manchestereveningnews.co.uk\/whats-on\/food-drink-news\/former-greater-manchester-sandwich-shop-32776239\" rel=\"follow nofollow noopener\" tabindex=\"0\" target=\"_self\">Posie<\/a>, on Marble Street within Spring Gardens, was mentioned in the prestigious publication &#8211; known as a culinary bible &#8211; where it was praised for its global wine list and its s expansive collection of more than 30 classic and bespoke cocktails and mocktails. It was also heralded for its small plates selection which had &#8216;plenty of flavour bursting out&#8217;.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cIt really came out of the blue for us,\u201d co-owner Sophie Robson tells the Manchester Evening News of the recognition. \u201cWhen 10 Tib Lane was mentioned a few months ago, it was like the recognition that we thought we deserved because we\u2019d been working so hard for five years.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\"><strong class=\"Strong_strong__e2x35\"><a aria-label=\"Click here Link opens in a new tab.\" class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.manchestereveningnews.co.uk\/newsletter-preference-centre\/?view=Solus&amp;mailingListId=d1c9a1cf-d773-47a3-b51a-f456316221bc&amp;utm_source=solusarticle\" rel=\"follow nofollow noopener\" tabindex=\"0\" target=\"_blank\">Click here <\/a>for the latest on Manchester&#8217;s food &amp; drink scene, gigs and more in our CityLife newsletter<\/strong><\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cWe\u2019ve been striving towards brilliance there and to get our food to the highest of standards and getting to know people so that we would be seen as one of those top restaurants in the city. Named after the flower, its title takes inspiration from the botanicals and flavours used to make up its range of cocktails.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">Its inclusion in the Michelin Guide is also more prevalent due to the fact that they are a cocktail bar, rather than a restaurant. \u201cIt\u2019s actually still a bit of a rarity,\u201d Sophie explains. \u201cThey made quite a point of the fact that we\u2019re a cocktail bar that has really amazing food to go alongside it. It puts us in quite a separate bracket from most other places because of that.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">The decision to expand offerings with Posie, which is situated just five minutes away from 10 Tib Lane, came about out of the trio\u2019s love for curating expertly-crafted drinks.<\/p>\n<p><img decoding=\"async\" alt=\"The team behind Posie, with Sophie centre\" loading=\"lazy\"  src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2026\/06\/0_First-look-at-Posie-bar.jpg\" \/><\/p>\n<p aria-label=\"The team behind Posie, with Sophie centre\" class=\"ImageCaption_caption-title__ccyQU\" data-testid=\"caption-title\">The team behind Posie, with Sophie centre(Image: Kenny Brown | Manchester Evening News)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">Highlights on the menu include the show-stoppers like the Crunchy Nut, including Mellow Corn Whiskey, Amontillado Sherry and served with a peanut honeycomb, or the Raspberry Ripple, featuring a mix of gin, Campari, Dolin Rouge and topped with a Lacto Fermented Raspberry.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">Sophie\u2019s suggestion would be the Jalisco Soda, consisting of El Rayo Plata Tequila, Lillet Blanc, Champagne cordial, and soda served in a highball glass and topped with an olive. It\u2019s proved to be a popular choice so far.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cTequila is having a massive moment at the minute and as soon as people try it they\u2019re caught in their tracks,\u201d Sophie says. \u201cIt\u2019s really light and refreshing, it\u2019s one of those drinks that people tell us they try to recreate at their garden parties.\u201d<\/p>\n<p><img decoding=\"async\" alt=\"The Raspberry Ripple cocktail at Posie\" loading=\"lazy\"  src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2026\/06\/0_AMR_MEN_250626_PO_06.jpg\" \/><\/p>\n<p aria-label=\"The Raspberry Ripple cocktail at Posie\" class=\"ImageCaption_caption-title__ccyQU\" data-testid=\"caption-title\">The Raspberry Ripple cocktail at Posie(Image: Posie)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">In terms of food, Posie&#8217;s menu includes a varied mix of the likes of spiced lamb koftas, stuffed Gordal olives, and a pork sausage and white cream fettuccine, as well as hash browns and a sticky honey toast.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cWe actually originally had the sticky honey toast down as a dessert because it comes with Baron Bigod cheese,\u201d she explains. \u201cBut it\u2019s one of them that really kind of blurs the lines between what it can be. It really helps cut through the Martini-style drinks and works with those flavours. Everytime people try it, they\u2019re like \u2018wow, I wasn\u2019t expecting it\u2019. It\u2019s always a positive reaction.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">When it came to opening Posie, Sophie, who is also behind the Henry C neighbourhood bar in <a aria-label=\"\" class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.manchestereveningnews.co.uk\/all-about\/chorlton\" rel=\"follow nofollow noopener\" tabindex=\"0\" target=\"\">Chorlton<\/a>, said they had the tried-and-tested experience of the two venues to help them launch with a strong and defining message of what they wanted to be.<\/p>\n<p><img decoding=\"async\" alt=\"Inside Posie, on Marble Street\" loading=\"lazy\"  src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2026\/06\/1782548007_741_0_First-look-at-Posie-bar.jpg\" \/><\/p>\n<p aria-label=\"Inside Posie, on Marble Street\" class=\"ImageCaption_caption-title__ccyQU\" data-testid=\"caption-title\">Inside Posie, on Marble Street(Image: Kenny Brown | Manchester Evening News)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cWe realised with 10 Tib Lane that once you&#8217;re labelled as something, it\u2019s incredibly hard to then step away with that,\u201d she laughs. \u201cWe never wanted it to be a French bistro, but that\u2019s one of the things that it was often called and it was very hard to shift that once it was out there.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cSo, with Posey, it was about ensuring we were a cocktail bar first and foremost, that also does these really amazing dishes they compliment that. We&#8217;ve got our head chefs at both sites, and that means that we&#8217;ve got these very great standards across the board.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">In fact, being so close to one another, some customers often venture into the luxurious by dipping their toes into both 10 Tib Lane and Posie on the same evening.<\/p>\n<p><img decoding=\"async\" alt=\"Sophie at Posie\" loading=\"lazy\"  src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2026\/06\/0_AMR_MEN_260626_SP.jpg\" \/><\/p>\n<p aria-label=\"Sophie at Posie\" class=\"ImageCaption_caption-title__ccyQU\" data-testid=\"caption-title\">Sophie at Posie(Image: Posie)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">&#8220;We have a lot of our regulars from Henry C who will come into town and will go to both sites,\u201d she explains. &#8220;There\u2019s also a lot of people who will take up the opportunity to enjoy the Happy Hours at both places. We\u2019ve learnt through doing things wrong, making them right and getting through all the other challenges that have headed our way.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cThey say you won\u2019t make a profit in hospitality until at least two years. 10 Tib Lane was only successful after 18 months, that\u2019s something you have to factor in &#8211; that it\u2019s a lot of hard work to establish and build your name and reputation. It\u2019s far from easy, but we do it because we love what we do.\u201d<\/p>\n<p><img decoding=\"async\" alt=\"Posie only opened in October last year\" loading=\"lazy\"  src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2026\/06\/1782548012_999_0_First-look-at-Posie-bar.jpg\" \/><\/p>\n<p aria-label=\"Posie only opened in October last year\" class=\"ImageCaption_caption-title__ccyQU\" data-testid=\"caption-title\">Posie only opened in October last year(Image: Kenny Brown | Manchester Evening News)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">Posie also has the distinction of having an all-female kitchen management team &#8211; featuring Head and Sous Chefs Britt, Sophie and Sian &#8211; which she believes also sets it apart with in an industry which is still often quite male-led.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">And, ultimately, Sophie says it helps being around such great industry leaders &#8211; especially in a city like Manchester which is fast gaining a reputation for its thriving cocktail scene.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">Asked why the city is emerging as a hotspot for a good drink, Sophie says it all comes down to the service. \u201cI feel like Mancunians like an independent business, they like to reward hard work,\u201d she suggests \u201cPeople here are happy to support somewhere where they know the staff are looked after and somewhere that is feeding back into the local economy.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh\" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\">\u201cAnd, as an independent, you can be more creative and you can bring all these ideas you have into what you do. They all do amazing, incredible things that they couldn\u2019t do without that.
