John Munro has become head chef for the Number One at The Balmoral at Princes Street<\/a> in Edinburgh. John has been senior sous chef at the restaurant since 2022.<\/p>\n

Munro, who also works as the restaurant\u2019s head beekeeper, has worked at a number of Edinburgh restaurants<\/a> including The Black Swan, The Gannet East and Timberyard.<\/p>\n

John said: \u201cIt is a huge honour to lead the kitchen at Number One.<\/a> My focus is on showcasing Scotland\u2019s exceptional ingredients while respecting the standards and identity that define the restaurant. I look forward to evolving the menu with the team and continuing to build on its legacy.\u201d<\/p>\n

During his time in the kitchen, John has gathered a reputation for dishes from local, high quality suppliers drawing inspiration from Scotland\u2019s landscapes. Seasonal menus featuring locally sourced seaweeds and elderflower foraged by Munro are a key feature of the dishes.<\/p>\n
