First up is a new restaurant landing at 61 Charterhouse Street in Farringdon this autumn, the latest in London\u2019s<a href=\"https:\/\/londontheinside.com\/heating-up-the-revival-of-the-open-fire-concept\/\" rel=\"nofollow noopener\" target=\"_blank\"> ongoing open-fire cooking boom<\/a>. It\u2019ll be followed by AREE, a fire-led, Thai-inspired restaurant, in early 2027, taking over the old E&amp;O site in Notting Hill. Both restaurants are founded alongside Romain and Edouard Bourrillon, and sit under the Maisons Vivantes restaurant group, alongside Cocotte, <a href=\"https:\/\/londontheinside.com\/an-ex-manteca-and-giaccos-chef-is-opening-a-southern-italian-restaurant-in-queens-park\/\" rel=\"nofollow noopener\" target=\"_blank\">Casa Felicia<\/a> and Jusu Brothers.<\/p>\n<p class=\"wp-block-paragraph\">Knowles has spent almost a decade in London\u2019s most acclaimed kitchens, from Mark Hix\u2019s Tramshed to Petersham Nurseries, before taking the top job at Kiln. AREE will draw on her recent travels through <a href=\"https:\/\/londontheinside.com\/bangkok-hot-list-our-favourite-spots-to-eat-in-the-city\/\" rel=\"nofollow noopener\" target=\"_blank\">Bangkok <\/a>and northern <a href=\"https:\/\/londontheinside.com\/tag\/thailand\/\" rel=\"nofollow noopener\" target=\"_blank\">Thailand<\/a>, exploring the layered flavours and techniques she encountered there, from Chinese influences to more experimental, contemporary approaches.<\/p>\n<p class=\"wp-block-paragraph\">Ahead of the Charterhouse Street opening, <a href=\"https:\/\/www.instagram.com\/karlaknowles__\/\" rel=\"nofollow noopener\" target=\"_blank\">Knowles<\/a> is running a series of pop-up dinners at the site throughout summer, teaming up with some of hospitality\u2019s most interesting names. Highlights include a collaboration with content creator <a href=\"https:\/\/www.instagram.com\/dudu_eats\/?hl=en\" rel=\"nofollow noopener\" target=\"_blank\">@dudu_eats<\/a> on 23rd July, an art-and-sake evening with Cluster and Dream Sake on 30th July, and a fire-led Thai supper club on 13th August, with dishes including Cornish crab and summer fruit miang, and coconut chicken curry.
