Josie Porter, known as <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.tiktok.com\/@thedietitianmethod\" target=\"\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">@thedietitianmethod<\/a> on TikTok, follows one key principle: avoiding \u201c<a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.mirror.co.uk\/news\/weird-news\/\" target=\"\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">weird<\/a> food rules.\u201d As a registered dietitian, she completed her training at several leading <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.mirror.co.uk\/all-about\/nhs\" target=\"\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">NHS<\/a> trusts in London.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">Porter, BSc MSc RD, introducing the video, saying: \u201cThis is everything a dietitian eats in a day with no weird food rules.\u201d Because it&#8217;s the weekend, she decided to go on a run and fueled up on a banana before heading out.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/06\/0_GettyImages-537462946.jpg\" alt=\"Tenderstem broccoli, garlic, and a sharp knife on a wooden board.\" loading=\"lazy\"  \/>Do you have lots of greens?(Image: Getty)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">After she came back, she then had her &#8220;proper breakfast&#8221;. She makes a delicious pistachio tiramisu granola bites with a mascarpone base, calling the dish &#8220;up there with one of my favorite variations.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">Next, she has her lunch which consists of boiled eggs, lots of chilli oil, edamame beans and spring onions. She has this all together on a chopping board and chops it all up and stuffs it into a soft pitta.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">When it comes to dinner, she enjoys variety and colour. It&#8217;s &#8220;ideal for brunch spreads, breakfast on-the-go, or when you want a little snack that still offers some nutritional oomph.&#8221;<strong class=\"Strong_strong__e2x35\">Ingredients<\/strong><\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \"><strong class=\"Strong_strong__e2x35\">serves 1, double for 2 etc&#8230;<\/strong><\/p>\n<ul class=\"UnorderedList_unordered-list__gzblI\">\n<li class=\"sc-700e1ff3-0 VljCu\">1 ripe banana<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">30g rolled oats<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">2 tbsp chopped pistachios<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">1 tbsp maple syrup (optional, for sweetness)<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">1 tsp instant espresso or coffee powder<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">1 tsp cacao powder<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">Pinch of salt<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">2 tbsp Greek yogurt (full fat works best, but any does the trick!)<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">1 tbsp mascarpone<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">Cocoa powder (for dusting)<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">Optional: pistachio butter for drizzling<\/li>\n<\/ul>\n<p class=\"Paragraph_paragraph-text__PVKlh \"><strong class=\"Strong_strong__e2x35\">Method<\/strong><\/p>\n<ol class=\"NumberedList_numbered-list__oytz_\">\n<li class=\"sc-700e1ff3-0 VljCu\">Preheat oven to 180\u00b0C fan if using over an airfryer. Skip this step if using an air fryer.<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">In a bowl, mash the banana with espresso powder, salt, and cacao powder, then mix in oats, maple syrup (if using), vanilla, and pistachios.<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">Onto baking paper, add all and press flat with a fork or spoon. Bake for 10 mins in air fryer on 180, or 15\u201318 mins in oven until just golden.<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">Meanwhile, mix the Greek yogurt and mascarpone until smooth and creamy. Add maple syrup if you want it sweet. Place into your serving bowl as your base.<\/li>\n<li class=\"sc-700e1ff3-0 VljCu\">Once your bites have cooled slightly, scrap into clusters with a spoon or fork.
