It seemed that every time she made <a href=\"https:\/\/www.eatingwell.com\/recipe\/281045\/chicken-hummus-bowls\/\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"1\" target=\"_blank\" rel=\"noopener\">Chicken Hummus Bowls<\/a>, she would text me to tell me how much her family loved it. So would her husband, who was actually the first one to make it after he saw the recipe in the September 2020 issue of EatingWell.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_6-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> But even though I had developed it and we have most of the ingredients on hand all the time, I had never made it for my family. When I finally did, our daughter declared it her new favorite dinner. It\u2019s been on our weekly dinner plan every week since.\n<\/p>\n<p id=\"mntl-sc-block_8-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Chicken Hummus Bowls are really simple to make and endlessly adaptable. The recipe starts with marinating chunks of boneless, skinless chicken thighs in a mixture of olive oil, cumin and paprika. The chicken cooks quickly under the broiler\u2014or, if you prefer, you can grill it like I did.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_10-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> While the chicken cooks, you can do the other prep: Whisk up a lemon-garlic vinaigrette, slice cucumbers and onion, halve some cherry tomatoes and chop a bit of parsley. That\u2019s really it. We use shallow bowls for most of our meals, and this dinner is no exception. I spread a generous amount of <a href=\"https:\/\/www.eatingwell.com\/is-hummus-good-for-you-8659418\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"1\" target=\"_blank\" rel=\"noopener\">hummus<\/a> in each, top it with the veggies and chicken, sprinkle it with parsley and drizzle it with the dressing. I like to serve the meal with warm whole-wheat pita for scooping it all up.\n<\/p>\n<p id=\"mntl-sc-block_14-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> As I mentioned, it\u2019s endlessly adaptable. Don\u2019t like <a href=\"https:\/\/www.eatingwell.com\/article\/7935330\/are-chicken-thighs-healthy\/\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"1\" target=\"_blank\" rel=\"noopener\">chicken thighs<\/a>? Chunks of boneless, skinless chicken breasts or pork tenderloin work, as do cubes of extra-firm tofu. If you have leftover cooked chicken, you could use that too\u2014I\u2019d just warm it with a bit of <a href=\"https:\/\/www.eatingwell.com\/is-olive-oil-good-for-you-8766002\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"2\" target=\"_blank\" rel=\"noopener\">extra-virgin olive oil<\/a> and the spices in the marinade before spooning it over the bowls. And just about any vegetable you have on hand works. I recommend including at least one crunchy vegetable for texture if you\u2019re going to skip the cucumber\u2014shredded romaine or cabbage would be lovely, as would thinly sliced bell pepper.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_16-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> The combo of chicken and hummus packs each serving with 31 grams of protein. <a href=\"https:\/\/www.eatingwell.com\/article\/290496\/this-is-how-much-protein-you-need-to-eat-every-day\/\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"1\" target=\"_blank\" rel=\"noopener\">Getting enough protein<\/a> is a priority for my entire family\u2014my husband is cycling nearly 100 miles a week while training for a bike race and our daughter is a multisport athlete, so they both rely on protein to keep their muscles strong, and I\u2019m trying to lose weight to help <a href=\"https:\/\/www.eatingwell.com\/20-minute-dinner-recipes-for-healthy-cholesterol-8718973\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"2\" target=\"_blank\" rel=\"noopener\">lower my cholesterol<\/a>.\n<\/p>\n<p id=\"mntl-sc-block_18-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> As an added bonus, the hummus, veggies, olive oil, <a href=\"https:\/\/www.eatingwell.com\/article\/32764\/eight-of-the-worlds-healthiest-spices-herbs-you-should-be-eating\/\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"1\" target=\"_blank\" rel=\"noopener\">herbs and spices<\/a> in this bowl are ingredients that can help fight inflammation. While acute inflammation is necessary to help heal wounds and recover from illness, <a href=\"https:\/\/www.eatingwell.com\/what-is-inflammation-8766645\" data-component=\"link\" data-source=\"inlineLink\" data-type=\"internalLink\" data-ordinal=\"2\" target=\"_blank\" rel=\"noopener\">chronic inflammation<\/a> has been linked to diseases like diabetes and cancer.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_20-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> So what\u2019s for dinner tonight?
