Mathew Alexander, Mathew Lukose, and Sebastian Joseph hope to create what will become one of <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/all-about\/wirral\" target=\"\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">Wirral<\/a>\u2019s top restaurants.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">The Indian Hive in <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/all-about\/wallasey\" target=\"\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">Wallasey<\/a> at 132 to 134 Poulton Road in Wallasey came about after a year of planning. All originally from the south Indian state of Kerala, they want people to \u201cdiscover India in what we offer\u201d and show a different side to a cuisine people across the UK eat every day.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">On its website, the business said it was \u201ccommitted to serving high-quality, flavourful food without compromise,\u201d and aims to be \u201cthe go-to place for those seeking a genuine Kerala dining experience in Wirral and the surrounding areas.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">However the Indian Hive got unlucky after<a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/news\/liverpool-news\/indian-takeaway-slapped-zero-food-31830226\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\"> its first ever inspection<\/a> led to a zero food hygiene rating when<a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/news\/liverpool-news\/new-indian-restaurant-given-zero-31934942\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\"> mouse droppings were found.<\/a> The restaurant now <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/news\/liverpool-news\/restaurant-proud-after-immediate-action-31942197\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">has a four star rating after turning things around.<\/a><\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">The restaurant\u2019s menu involves familiar dishes like korma and jalfrezi, it also includes a number of less familiar ones inspired by Chettinad and Kottoyam cuisines. Mr Joseph, who moved with his family to the UK more than two decades ago, started the Mother Indian restaurant in <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/all-about\/hoylake\" target=\"\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">Hoylake<\/a> while Mr Lukose previously set up Arranged Marriage, a popular restaurant in New Zealand.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">Mr Joseph <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">told the ECHO<\/a> they focused on south Indian cuisine as this was something people were less familiar with and totally different from food from the north of the country. He said they wanted to offer something more authentic for those looking for it, adding: \u201cThe focus here came from South Indian food and we are making sure it\u2019s delivered properly and professionally.\u201d<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/07\/1751732413_268_0_Chefs-at-work-at-The-Indian-Hive-in-Wallasey.jpg\" alt=\"Rice, butter chicken, and other food served at the Indian Hive\" loading=\"lazy\"  \/>Rice, butter chicken, and other food served at the Indian Hive(Image: Liverpool Echo)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">Mr Alexander, who is the building\u2019s landlord, said: \u201cWe feel people aren\u2019t aware of what Indian food is. This is what we try to say to people.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">\u201cPeople haven\u2019t got the knowledge of that original taste of Indian food and that is one of the important things. I would say it\u2019s special because of the authentic food. The second thing is the real spices brought from India.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">With its open kitchen where people can look in at their food being made, Mr Alexander said he didn\u2019t think \u201canywhere else is like it,\u201d adding: \u201cIf you go across the north west, you wouldn\u2019t see a single Indian which is an open kitchen. If you go to any Indian restaurant, you won\u2019t see an open kitchen but you can see here how it has been prepared and how it\u2019s cooked.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">The trio were also keen to help the area they\u2019ve set up in turn around and plan to host a number of charity events with local schools and organisations. This was a neglected area and we wanted to bring more business back into the space,\u201d adding: \u201cWe want people to taste the real taste of India. There&#8217;s a huge demand for it [&#8230;] people want somewhere they can spend their money and relax.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">However after their zero food hygiene rating was publicised, Mr Alexander said: \u201cWe have got literally no business, we have been given a bad name. People were slagging us off and were saying it\u2019s bad.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">He added: \u201cThis will take time for us to pull through. This will be very difficult. We are looking to charities to support them.
