Flagship restaurant Tom Lawson at The Psalter will open in the boutique hotel at the start of May and \u2018will celebrate British produce at its peak\u2019, according to the chef.<\/p>\n
The exclusive tasting menu-only 32-cover restaurant will be open from Thursday to Saturday with dishes on the launch menu to include Isle of Wight tomatoes with watermelon and jalapeno; cauliflower cheese \u2018not like Grandma B\u2019s\u2019; Wortley Estate lamb with wild garlic and a lamb fat terrine; and Yorkshire rhubarb with white chocolate and gingerbread.<\/p>\n
The menu will be \u00a395 per person with the option of a wine pairing for \u00a370, with the wine offer oversee by Jak Bradley and Jonathan Steeper.<\/p>\n
Lawson began his culinary journey as an apprentice at Sheffield City College and later went on to work at 26-cover Rafters Restaurant in the city. <\/p>\n
Last year he left the restaurant to take on The Psalter.<\/p>\n
Writing on the hotel\u2019s website he says: \u201cThis new restaurant is a real passion project – it\u2019s about returning to the roots of what makes fine dining exciting: seasonality, creativity and attention to every last detail.<\/p>\n
