And across the road is Chef Roussos\u2019s Kima <\/a>an equally delightful seafood restaurant that embraces a \u201cfin to gill\u201d philosophy meaning \u201cuse-all, waste-not\u201d with dishes using the entire fish from head to tail.<\/p>\n Caldesi<\/a>, founded in 2002 by Chef and Restaurateur Giancarlo Caldesi and his wife Katie, is rightly loved for its authentic Italian regional cuisine.
