Once best known for its barber shops, nail salons and discount furniture stores, the street is now finding a new energy, with cafes, eateries and bars drawing in locals and visitors alike. Soon, it will welcome another addition &#8211; and this one promises a sun-drenched twist.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">Next month, Medusa will open its doors, bringing Greek-inspired small plates, cocktails and a laid-back Mediterranean spirit to the heart of <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/all-about\/waterloo\" target=\"\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">Waterloo<\/a>. Behind the project is 30-year-old Adam Noble, from <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/all-about\/fazakerley\" target=\"\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">Fazakerley<\/a>, who already runs the popular Noble\u2019s Kitchen food truck, touring the country to cater to festivals and other events.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">For Adam, Medusa represents a long-held dream. He told <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">the ECHO<\/a>: \u201cI started as a food truck and that\u2019s still very much ongoing. The end goal was always to have a restaurant.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">He\u2019d been quietly keeping an eye out for the right space when the premises of Il Capitano\u2019s &#8211; a successful local Italian restaurant &#8211; came up for sale. The owners are <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/whats-on\/food-drink-news\/restaurant-takes-big-gamble-prepares-32019031\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">relocating around the corner to a bigger space<\/a> due to demand.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">Adam explained: \u201cA lot of restaurants go up for sale for the wrong reasons. But this place had worked as a restaurant for six years, so that really caught my eye.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">While he\u2019s no stranger to <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/all-about\/crosby\" target=\"\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">Crosby<\/a> and <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/whats-on\/food-drink-news\/vibrant-town-sea-thats-often-29523925\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">Waterloo<\/a>, Adam admits he didn\u2019t know St John\u2019s Road well until recently. That first visit left an impression.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">He said: \u201cI was surprised how communal it is. Everyone\u2019s so friendly and welcoming. The people there are dead proud of where they live and just want you to do well. That community feel really caught me by surprise.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">The name Medusa hints at the concept. Adam and his partner are passionate about Greece &#8211; they\u2019re even getting married there next year &#8211; and they\u2019ve been serving Greek dishes from the food truck for the past two years.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/08\/1_image_6483441-2023-04-28T094116119JPG.jpg\" alt=\"Adam Noble from Fazakerley is opening Medusa in Waterloo after finding success with his food truck\" loading=\"lazy\"  \/>Adam Noble from Fazakerley is opening Medusa in Waterloo after finding success with his food truck(Image: Adam Noble)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">But this won\u2019t be a traditional Greek taverna. Adam said: \u201cI absolutely love Greek food but what I don\u2019t love about Greek restaurants is, for example, if you order moussaka, you just get a big slab of it &#8211; it&#8217;s a bit much. I like to experience other flavours.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">&#8220;So what we\u2019re doing is taking these classic Greek dishes and turning them into small plates. Tapas places are really popular right now because people like sharing and trying different things together.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">The menu will feature favourites like moussaka, reimagined for grazing and sharing, as well as gyros and souvlaki. There will also be Greek-themed cocktails to pair with the food.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">Adam adds: \u201cWe want to bring a bit of Greece to <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.liverpoolecho.co.uk\/whats-on\/food-drink-news\/vibrant-town-sea-thats-often-29523925\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">Waterloo<\/a> &#8211; and a bit of its glamour. Greece is ancient, which is what it\u2019s loved for, but we want to put a modern twist on it.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">Adam\u2019s vision is about more than food. He wants Medusa to be a place where people linger: \u201cWhen we go to Greece, we always say it feels like home. That\u2019s what I want people to feel like when they walk in &#8211; greeted like they\u2019re walking into their second home.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">&#8220;I want them to feel comfortable, have that second bottle of wine because they\u2019re enjoying themselves. I don\u2019t want people to just turn up and eat to leave.\u201d<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \">With the keys in hand next week and minimal work needed to the space, Adam hopes to open at the start of September.
