When guests start arriving in September, they’ll 144 suites and seven restaurants to choose from, including a London outpost of NYC’s Carbone, the upscale Italian-American concept from Major Food Group that’s known for its celeb clientele and spicy rigatoni vodka.

Another big New York name that’s coming across the pond is omakase icon Masa Takayama, who’s behind the city’s three-Michelin-starred Masa where prices start at $750-a-head. He’s opening Tobi Masa, which’ll blend blends Japanese minimalism with Western luxury with dishes like truffle-laced Toro Tartare and the delicate Surimi Masa Pasta.

Joining those two will be southern Mediterranean brasserie Serra, led by ex-Berenjak and Murano chef Alex Povall; the Eagle Bar up on the roof, with an 11-foot gold eagle sculpture for decoration and cocktails by Liana Oster, formerly of NoMad London; tearoom and dessert salon Jacqueline, run by Marius Dufay; and cafe-deli GSQ.

Richard Caring’s version of Le Caprice was long-planned to take the final spot inside the hotel. Following Jeremy King’s reopening of the original Le Caprice site in Mayfair, now under the name Arlington, Caring was readying his reinterpretation of the iconic restaurant (he bought the name back in 2005). However, it’s not been confirmed in the announcement detailing all the other food and beverage partners, and is looking increasingly unlikely to happen. We don’t have any details yet of what will be taking its place, but the Financial Times is hinting that Ruth Rogers might be involved in the project.
