It started as a little-known secret in a Greater Manchester neighbourhood, but a Scandi-inspired restaurant<\/a> soon grew a reputation that spread nationwide.<\/p>\n Osma, in Prestwich<\/a>, led by Head Chef Danielle Heron and co-owner Sofie Stoermann-Naess, first opened its doors in October 2020. It soon earned recognition in the Michelin guide whilst Danielle also went on to appear on Masterchef: The Professionals last year.<\/a><\/p>\n But at the start of this year, Dani and Sofia said they had made the difficult decision to close<\/a> their Bury<\/a> New Road venue having \u2018struggled to find experienced staff’ to work in Prestwich. The move led many residents in the area to share their love<\/a> for the restaurant\u2019s food, with one saying they were \u2018impatient and excited for what lies ahead\u2019.<\/p>\n Having also had a pop-up kitchen in the city centre<\/a> within the popular Exhibition space, details of their next pop-up venture which will see the Osma co-owner\u2019s take on a slightly new concept.<\/p>\n Stay connected with our City Life newsletter here<\/a><\/strong><\/p>\n Nordo Sando will be a new Japanese-style sandwich and small plates pop-up, which will be located at Kampus in the city centre and will operate between September and October.<\/p>\n Launching on August 31, the street food<\/a> pop-up\u2019s menu will \u2018live up to Osma\u2019s known eye for quality\u2019 and will feature Japanese-style sandos using brioche from Prestwich favourite Masa Bakery.<\/p>\n Sandwich fillings will include the likes of Braised Shortrib, Tempura Oyster Mushroom and Crispy Chicken Thigh, whilst small plates will include Carlington oysters with inventive toppings, salmon sashimi and Japanese pancakes with Norwegian brown cheese for dessert.<\/p>\n There will also be a host of collaborations with \u2018some of the best food operators in the city\u2019, including a varied selection of bottled beers, wine and canned cocktails from Moth.<\/p>\n \u201cWe wanted to share the joy of sandos in a fresh way for Manchester,\u201d Dani said of the plans for Nordo Sando. \u201cThis pop-up is the perfect chance to get stuck in with something new during our break, and Kampus the perfect location.<\/p>\n \u201cWe want to provide a spot for the surrounding community to hang out, and showcase both the comfort and creativity of the sando. It\u2019s casual food but with a lot of heart.\u201d<\/p>\n The pop-up will be hosted in Kampus\u2019 Bungalow building, which previously hosted Where The Light In\u2019s three-part conceptual dining experience<\/a> earlier this year, and is currently occupied by the Rainy Day listening bar.<\/p>\n Adam Brady, Executive Director of Kampus\u2019 joint developers HBD, added: “The Bungalow is our village hall, playing host to a number of exciting pop ups and residencies.
