Opened by content creator Zack Hipps, the Northern Quarter newcomer has already made waves with its vivid matcha drinks and a modern spin on the forgotten Manchester Tart. <\/p>\n<p>Morning Glory <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"600\" src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/09\/Morning-Glory-1.jpg\" alt=\"\" class=\"wp-image-202549\"  \/>Morning Glory Cafe<\/p>\n<p>At the heart of it all is Zack Hipps, a familiar face to many online thanks to his work as a content creator and influencer. He\u2019s also one of the judges for the <a href=\"https:\/\/ilovemanchester.com\/awards\" target=\"_blank\" rel=\"noopener\">I love Manchester awards 2025<\/a>. Now, he\u2019s swapped the fast-paced world of advertising and social media for something altogether more grounded, running his own caf\u00e9.<\/p>\n<p>\u201cIt was stressful, I won\u2019t lie,\u201d Zack laughed, recalling the chaos of opening week. \u201cTwo days ago it was absolutely crazy. But when I look at the place now, it\u2019s exactly how I wanted it to be, it looks amazing.\u201d<\/p>\n<p>Zack Hipps \u2013 Influencer and Morning Glory owner<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"897\" height=\"609\" src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/09\/Zacc-Hipps.jpg\" alt=\"\" class=\"wp-image-202547\"  \/>Zack Hipps \u2013 owner of Morning Glory<\/p>\n<p>Zack\u2019s journey to caf\u00e9 ownership might look like a sudden leap, but in truth, food and drink have been a constant thread in his life.<\/p>\n<p>\u201cMy first proper job was at <a href=\"https:\/\/ilovemanchester.com\/sweet-treats-manchester\" target=\"_blank\" rel=\"noopener\">Ginger\u2019s Ice Cream Emporium<\/a>, just across the road from here,\u201d he said. \u201cThat\u2019s where I fell in love with coffee. From there, it just escalated, you stop drinking instant, then you stop drinking the cheap brands, and before you know it, you\u2019re deep in the world of speciality coffee. Suddenly, you\u2019re the person saying you\u2019ll only drink beans that have been through the digestive system of an elephant,\u201d he laughed.<\/p>\n<p>Supporting Mancunian suppliers<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"600\" src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/09\/Morning-Glory.jpg\" alt=\"\" class=\"wp-image-202546\"  \/>Morning Glory<\/p>\n<p>Morning Glory\u2019s coffee comes from Dark Arts, a roastery Zack settled on after consulting the city\u2019s coffee aficionados. \u201cI asked loads of Manchester coffee nerds what they thought of different brands because I didn\u2019t want it to just be my personal taste. It\u2019s about creating something people want, not just what I think is cool. Dark Arts came up again and again, so it felt like the right choice.\u201d<\/p>\n<p>The caf\u00e9 also makes its own syrups, raspberry, chocolate bread and more, alongside using premium Sip Syrups. \u201cIt\u2019s about control and quality,\u201d Zack explained. \u201cI want everything to taste as good as it possibly can.\u201d<\/p>\n<p>And then, of course, there are the matcha specials, colourful, striking drinks that look as good as they taste. Working with local supplier Kyoto Matcha, Zack spent weeks developing recipes that would stand out.<\/p>\n<p>\u201cThe raspberry matcha iced drink is probably my favourite,\u201d he admitted. \u201cThe sharpness of the raspberry works so well with the earthiness of matcha, and then you\u2019ve got the creaminess of the milk on top. It looks amazing, but it\u2019s also a nightmare to make because you have to strain out all the raspberry seeds. Still, I think you can taste the effort, and honestly, I don\u2019t know anywhere else in Manchester doing it like this.\u201d<\/p>\n<p>Showcasing Manchester\u2019s independent producers<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"600\" src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/09\/Morning-Glory-food-and-drink.jpeg\" alt=\"\" class=\"wp-image-202551\"  \/>Manchester Tart at Matcha Madness at Morning Glory<\/p>\n<p>For Zack, the caf\u00e9 is as much about showcasing Manchester\u2019s independent producers as it is about good coffee. \u201cWe\u2019ve got Kyoto Matcha, Hip Hop Kombucha, Thicc Slice for bagels, and then Vanilli\u2019s Bakery in Ancoats, where I worked with on developing our version of the Manchester Tart,\u201d he said proudly.<\/p>\n<p>This focus on collaboration reflects <a href=\"https:\/\/ilovemanchester.com\/northern-quarter-named-one-of-the-coolest-neighbourhoods-on-earth-by-time-out-magazine\" target=\"_blank\" rel=\"noopener\">the wider ethos of the Northern Quarter<\/a>, where independent businesses feed off each other\u2019s creativity. \u201cManchester allows you space to grow,\u201d Zack said. \u201cThat\u2019s what I love about it. I want Morning Glory to be part of that, a place that people feel connected to.\u201d<\/p>\n<p>Why is the Manchester Tart not more well-known?<\/p>\n<p>Ask anyone over a certain age in Manchester and they\u2019ll have fond (and sometimes messy) memories of the Manchester Tart: a shortcrust pastry base filled with raspberry jam, custard, and coconut, often finished with a cherry on top.<\/p>\n<p>\u201cIt\u2019s bizarre that it\u2019s not more popular, because it tastes great,\u201d Zack said. \u201cFor me, food and culture are intertwined, and as someone who loves Manchester, I wanted to bring it back. We\u2019ve made little tweaks to modernise it, but the heart of it is still the same. I honestly don\u2019t know why more places aren\u2019t doing it.\u201d<\/p>\n<p>By putting the tart front and centre, Morning Glory is tapping into Mancunian nostalgia while reintroducing it to a new generation. \u201cI see it as almost a forgotten classic,\u201d Zack explained. \u201cIt deserved a bit of love.\u201d<\/p>\n<p>Currently Manchester hospitality industry challenges<\/p>\n<p>There\u2019s no escaping the fact that opening a caf\u00e9 in 2025 comes with challenges. Rising costs have seen much-loved neighbours, like <a href=\"https:\/\/ilovemanchester.com\/blue-monday-feel-good-club\" target=\"_blank\" rel=\"noopener\">Feel Good Club<\/a>, forced to shut their doors.<\/p>\n<p>\u201cI think it\u2019s really sad,\u201d Zack admitted. \u201cPlaces like that closing is a huge loss. We knew costs were going to be high when we opened, so we\u2019ve tried to plan for it, but it\u2019s something we\u2019ll need to constantly adapt to. The main thing is keeping our products accessible while still being high quality. That balance is really important.\u201d<\/p>\n<p>What\u2019s the story behind the name, Morning Glory?<\/p>\n<p>Of course, the name \u201cMorning Glory\u201d has already sparked plenty of conversation. \u201cI wanted a name with layers,\u201d Zacc grins. \u201cThere\u2019s obviously the Oasis song, which ties into Manchester\u2019s music history. Then there\u2019s the literal meaning,  that feeling you get from a great coffee in the morning. The building is owned by the Methodist Church, so there\u2019s a cheeky nod there too.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"900\" height=\"597\" src=\"https:\/\/www.europesays.com\/uk\/wp-content\/uploads\/2025\/09\/Bagels-at-Morning-Glory.jpg\" alt=\"Top quality bagels\" class=\"wp-image-202548\"  \/>Gorgeous bagels from Thicc Bagels <\/p>\n<p>Alongside bagels, Morning Glory has another showstopper in the works: \u201cGlory Holes.\u201d<\/p>\n<p>\u201cThey\u2019re bagels filled with whipped cream cheese, drenched in garlic butter, and topped with rosemary and thyme,\u201d Zacc said. \u201cThey\u2019re ridiculously indulgent and honestly, super delicious. We\u2019ve not had them every day yet, but when we do, people go mad for them.\u201d<\/p>\n<p>From content creator to Cafe owner<\/p>\n<p>With thousands of followers online, Zacc is well aware that people will be curious how he plans to balance being a caf\u00e9 owner with being a creator.<\/p>\n<p>\u201cIt\u2019s definitely going to be a learning process,\u201d he said. \u201cI\u2019ll be here a lot in the beginning, but I\u2019ve already got a really strong team, and developing them is key. The caf\u00e9 is a big focus for me, but creating content will always be part of what I do, I think the two can complement each other.\u201d<\/p>\n<p>If there\u2019s one thing Zacc wants, it\u2019s feedback. \u201cI want people to tell me what they like, what they don\u2019t like, so I can improve. I want Morning Glory to be the best it can be, and that requires people\u2019s input. I want it to be somewhere Manchester can be proud of.\u201d<\/p>\n<p>From the neon-green matcha lattes to the flaky Manchester Tarts, Morning Glory is a love letter to Manchester\u2019s food culture, past and present.
