{"id":399586,"date":"2025-09-05T09:11:20","date_gmt":"2025-09-05T09:11:20","guid":{"rendered":"https:\/\/www.europesays.com\/uk\/399586\/"},"modified":"2025-09-05T09:11:20","modified_gmt":"2025-09-05T09:11:20","slug":"michelin-star-winning-chef-stuart-ralston-to-open-edinburgh-bar","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/uk\/399586\/","title":{"rendered":"Michelin-star winning chef Stuart Ralston to open Edinburgh bar"},"content":{"rendered":"<p>\n    A second \u201cintimate\u201d cocktail bar, Vivien, named after lesbian poet Ren\u00e9e Vivien, will be located beneath it. \u00a0\n  <\/p>\n<p>\n    Situated on 36 Broughton Street, the former site of Fhior, Vinette will be modelled o the \u201cconvivial spirit\u201d of Parisian wine bars. \u00a0\n  <\/p>\n<p>\n    The menu will revolve around ingredient-led, seasonal cooking ingrained in European dining culture, while celebrating artisanal Scottish producers. \u00a0\n  <\/p>\n<p>\n    The kitchen will be headed up by Stuart\u2019s younger brother, Calum Ralston, who has trained with the group over the past 18 months. \u00a0\n  <\/p>\n<p>\n    <img   alt=\"Ralston's new venture - Vinette, a Parisian-style bar\" style=\"width: 100%;\"\/>Ralston&#8217;s new venture &#8211; Vinette, a Parisian-style bar (Image: Aizle) Dishes will include Braised duck hearts on toast with pickled green peppercorns, Grilled Iberico pork chop with cider-braised onions &amp; mustard sauce and Pigs head croquettes with smoked paprika. \u00a0\n  <\/p>\n<p>\n    Front of House will be led by Elle Mackay, the incoming general manager of Aizle.\u00a0\n  <\/p>\n<p>\n    Located beneath, Vivien will be an intimate cocktail bar and late-night counterpart to Vinette. \u00a0\n  <\/p>\n<p>\n    Named after Ren\u00e9e Vivien, who lived in\u00a0the \u2018Belle \u00c9poque\u2019 Paris of the late 19th and early 20th centuries, it will \u201cembody her rebellious and inquisitive spirit, as well as aesthetic principles of Decadence\u201d, Ralston\u2019s team said in a statement. \u00a0\u00a0\n  <\/p>\n<p>\n    The bar programme will be headed up by Rebekah George. Coming immediately after the closure of his debut restaurant Aizle, the new openings will be an addition to Ralston\u2019s portfolio of restaurants &#8211; now named as the Aizle Hospitality Group &#8211;\u00a0 which include Michelin-starred Lyla, and Michelin Bib Gourmand Noto and Tipo. \u00a0\n  <\/p>\n<p>\n    Ralston\u2019s older brother, Scott, will be stepping into the Group Chef role to oversee the casual restaurants.\n  <\/p>\n<p>\n    <strong>Read More:<\/strong>\n  <\/p>\n<p>\n    Ralston said: \u201cAfter closing Aizle, it felt important to mark a new chapter.
