It was also named the Best Lebanese Restaurant\/Takeaway in the UK at the British Kebab Awards last year too.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">But Mitch isn\u2019t afraid that he can\u2019t live up to the already-high expectations that come with such accolades. He says he thrives on it &#8211; and is continuing full steam ahead as he expands the empire with a new spot in Manchester.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">Opening on Deansgate on Friday (September 26), SQEW is all about authenticity. Alongside its Khobez and Durum wraps, there&#8217;s hummus sharing platters, Arabi fries boxes, and rice platters. We\u2019re talking about the authentic Arabic shawarma and we just weren\u2019t getting the right flavours.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">But the idea for the <a class=\"TextLink_text-link__dBSS0 TextLink_enabled__dJF3l\" href=\"https:\/\/www.manchestereveningnews.co.uk\/all-about\/street-food\" target=\"_self\" aria-label=\"\" tabindex=\"0\" rel=\"noopener\">street food<\/a> spot didn\u2019t just happen overnight. It took seven years from concept to realisation &#8211; and the name is all down to one chat Mitch had whilst fitting a boiler.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">\u201cI was working at a brand consultant&#8217;s and, at the time, I had the name of Middle East Feast that I was working with,&#8221; Mitch says. &#8220;I asked them if I could just take half an hour of their time and show them my ideas with and we just ended with SQEW. I didn\u2019t like it at first but a couple of days later, I was like, oh God, that\u2019s it. Mitch admits the business was very close to closing for good.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">&#8220;It wasn&#8217;t good enough,&#8221; he openly admits. &#8220;We failed and we failed miserably for about 16 months. We didn\u2019t have a single profitable week and we were really struggling. We were on the verge of trading insolvent.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">\u201cThen, a post from Leeds+ Social of one of our hummus bowls just took off and went viral. It literally changed everything for us. They start from \u00a312.50 each.(Image: Kenny Brown | Manchester Evening News)<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">In some ways, Mitch said he believed he needed that experience to show him what being close to rock bottom was like and he insists it\u2019s spurred him on to finesse what he now has opening in Manchester.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">\u201cWe\u2019ve refined the concept from Leeds and cut out the need for people to wait 20 minutes to get served and to customise what they want,&#8221; he says. &#8220;People can use self-service screens, and there\u2019s new additions too.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">&#8220;Everything is made fresh each day, we use ingredients from Lebanon, Palestine and Egypt, where that provenance comes from. We&#8217;ve got a massive respect for the true authentic shawarma you&#8217;d find in Syria and Lebanon.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">And with that, Mitch is ready to get controversial. You want Lebanese garlic sauce instead. If you&#8217;re eating lamb, it wants to be with Tahini and pomegranate, it wants to come with certain salad pairings. I\u2019m not about this ketchup nonsense at all.<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">&#8220;Maybe it shouldn\u2019t be my choice how people choose to eat their food, but my argument is that we\u2019re not trying to be everything to everyone. We\u2019ve mastered what works for us. We&#8217;re true authentic Shawarma for authentic Shawarma fans.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">In addition, Mitch says SQEW is far from a late-night kebab shop. With Leeds, we found that our busiest period actually ended up being lunchtime on a Tuesday. We want to be somewhere that people can enjoy during the day, at lunch or after work.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">Asked for his top suggestion for anyone new to SQEW, Mitch says: \u201cI&#8217;d recommend the authentic chicken, which is Khobez bread, which is a Lebanese flatbread, with extra Toum, a Lebanese garlic sauce, and then pickles, pomegranate, fries, and then the end of the sandwich is charred on the burners with all that rendered chicken fat. I really do think we&#8217;ve achieved that.&#8221;<\/p>\n<p class=\"Paragraph_paragraph-text__PVKlh \" data-tmdatatrack=\"content-unit\" data-tmdatatrack-type=\"paragraph\" publication=\"men\">SQEW will open from Friday (September 26) at 12pm.
