{"id":454041,"date":"2025-09-27T00:31:27","date_gmt":"2025-09-27T00:31:27","guid":{"rendered":"https:\/\/www.europesays.com\/uk\/454041\/"},"modified":"2025-09-27T00:31:27","modified_gmt":"2025-09-27T00:31:27","slug":"ivan-tisdall-downes-is-opening-field-notes-in-hackney","status":"publish","type":"post","link":"https:\/\/www.europesays.com\/uk\/454041\/","title":{"rendered":"Ivan Tisdall-Downes is opening Field Notes in Hackney"},"content":{"rendered":"<p>The former Native chef is opening a solo spot in London Fields<\/p>\n<p>We were big fans of Native, the sustainable, <a href=\"https:\/\/londontheinside.com\/wasteless-wonders-the-best-dishes-and-drinks-made-from-food-waste\/\" target=\"_blank\" rel=\"noreferrer noopener\">zero-waste<\/a> restaurant that Ivan Tisdall-Downes founded with Imogen Davies, having visited it at its <a href=\"https:\/\/londontheinside.com\/map\/covent-garden\" target=\"_blank\" rel=\"noreferrer noopener\">Neal\u2019s Yard<\/a>, <a href=\"https:\/\/londontheinside.com\/loti-eats-native-2\/\" target=\"_blank\" rel=\"noreferrer noopener\">Borough<\/a> and <a href=\"https:\/\/londontheinside.com\/native-at-browns\/\" target=\"_blank\" rel=\"noreferrer noopener\">Mayfair<\/a> incarnations. So when news comes that Ivan\u2019s opening a new project, we\u2019re interested.<\/p>\n<p>Field Notes, opening at the Monohaus development in <a href=\"https:\/\/londontheinside.com\/map\/hackney\/\" target=\"_blank\" rel=\"noreferrer noopener\">London Fields<\/a> in October, will be a reflection of Ivan\u2019s 15-year exploration of food cultures and sustainability practices around the world. The menu will be British but with international influences and nods to the flavours of his childhood. It\u2019ll also be constantly evolving but you can expect dishes like morel har gow, brown crab tikka masala, and pickled cockle flatbread. He\u2019ll also be doing reimagined versions of old faves, like his fermented potato waffle and his fish fillet.<\/p>\n<p>The drinks offering, what Ivan\u2019s calling a \u2018Living Drinks Progam\u2019, will follow the same sustainable principles, featuring wild sodas, botanical cocktails and low-intervention wines from across the globe.<\/p>\n<p>Speaking about the opening, Ivan said: \u201cField Notes is about exploring sustainability as a global conversation.
